Happy Easter

My kitchen was a little Easter Bunny factory of yumminess yesterday. I made a few treats because Easter just isn't Easter without a little CHOCOLATE.

I packed up half the goodies and bought them over to my neighbor's house and the other half Mum and I will spread out over the week.

I made a batch of my Mini Chocolate Protein Donuts and a batch of Coconut Nests. If chocolate was your trigger food (mine was bread & pasta) I might skip the nests but for those that were fine with a nibble or two and just still want to have something for you on the Easter table. Here you go...




Shelly's Mini Chocolate Protein Donuts

1 cup Almond Flour (aka Almond Meal) (Trader Joe's, health food stores, online or make your own)
1/2 cup Chocolate Protein Powder
1/2 cup Multigrain Pancake Mix (I use this)
1 teaspoon Baking Powder
1/2 teaspoon Cinnamon
2 Tablespoons Unsweetened Cocoa
1 Egg, beaten
3 Tablespoons Sugar Free Torani Syrup (I used SF Vanilla)
1 Tablespoon Canola Oil
1/4 cup Water
Super Groovy Mini Donut Pan

Preheat oven to 325. Spray your super groovy mini donut pan with Pam. Mix all ingredients till well combined. Fill pan 1/2 full with batter. Bake 8 minutes. Remove from pan and cool on wire rack. Makes 24 mini donuts.


Shelly's Chocolate Donut Glaze

4 Mini Sugar Free Chocolate Bars (those mini Hershey's I found them at CVS)
1 Tablespoon Sugar Free Torani Syrup (I used SF Vanilla)

Nuke for 30 seconds or so till melted. Stir to combine. Dip cooled donuts into chocolate glaze and then into optional toppings. Allow to set on wire rack.

I made a few plain chocolate glazed and a few topped with crushed Sugar Free Malted Milk Balls, Hazelnuts, and Toasted Coconut.

Shelly's Coconut Nests

7 oz. Sugar Free Milk Chocolate Bar, broken up (I found them at Trader Joe's)
1 cup Unsweetened Coconut, toasted
1/2 Cup Whole Grain Flake Cereal (like a Special K or Bran Flakes)
Sugar Free Jelly Beans (I found them at CVS)

Break up chocolate in a glass bowl and microwave for 25 second intervals stirring in between till melted. Mine took about a minute. Stir in toasted coconut and cereal till coated. Spoon slightly larger than a golf ball sized rounds "nests" onto wax paper and add jelly bean "eggs." Place in fridge to set for 1 hour. Store in fridge or they can be frozen too. Makes 8 (They are big enough to share or 1 can last me all day)

These are an Eggface family tradition. I've made these nests every year since I was a little kid. It's nice despite getting my guts rearranged the tradition can continue (albeit modified.)
