Breakfast: I made Scrambled Eggs with a sprinkle of cheese and bacon. It seems like a Sunday AM when you have a breakfast like Eggs and Bacon, midweek I don't often take the time to make breakfasts that require too much clean-up.

Lunch: We're getting RAIN in Southern California. It's real rain too, not our normal sprinkles that we call "rain storms." I have to laugh as someone born and raised on the East Coast (New York, Long Island) when we get sprinkles our news goes nuts... we have banners "Storm Track 2017" and several reporters across the county showing us the sprinkles from different vantage points, some are just standing waiting for the sprinkles to arrive. The news reporters actually have something to report on this time... and it's perfect weather for soup.

I had a zucchini and a yellow crookneck squash in the fridge that I needed to use and I scored a big box of Earthbound Farms Baby Kale at the 99 cents store. I often get random, crazy cool deals on produce so if you are on a budget you might want to check it out. Last week it was one of those cool orange (aka cheddar) cauliflower for 99 cents. Anyway the kale went in this soup my Sicilian Grandmother (Nonna) would have given 2 thumbs up...

Lunch Dinner Low Carb Weight Loss Surgery Bariatric Menus Food Recipes

Shelly's Rainy Day Meatball Garden Soup

1 Yellow Onion, diced
1 Tablespoon Olive Oil
2 cloves Garlic, minced
3-4 sliced Crimini Mushrooms, sliced
1 Yellow Squash, sliced
1 Zucchini, sliced
2-3 cups (uncooked) Baby Kale (or Spinach)
1 (14.5 oz) can Diced Tomatoes, with juice
2 cups Chicken Broth
10-12 Cocktail Beef Meatballs (frozen, cooked)
1 teaspoon Oregano
1/2 teaspoon Salt
a few twists of Black Pepper

In a large pot, saute onions in olive oil till slightly golden, add garlic, mushrooms, sliced squash and zucchini and cook about 5 minutes. Stir and add remaining ingredients. You can use homemade, cooked meatballs but I love those beef cocktail size ones at Costco for this (and it's easy.) Lower heat and cover. Cook 30 minutes. Stir once or twice during cooking time. Serve with grated Parmesan Cheese or Homemade Crunchy Cheese Crackers or I had them with those Oven Baked Cheese Bites I mentioned the other day on the blog.

More Eggface Soups (January is National Soup Month)

Dinner: We had plans to go out to dinner (yay holiday gift cards) but the weather makes you just want to watch the Kid's Baking Championship curled up under a blanket on the couch. I made a batch of Lemon Ricotta Pancakes for this coming week, to make  They heat up great, but I also love them cold with a smear of almond butter wrapped in foil on my early AM walk. Dinner was a couple of pancakes with a little Sugar Free Maple Syrup on them.
