Chocolate Almond Panini

OMG this was sooooo good! Our sweet treat during the season finale of Grey's Anatomy last night. Did you see it? I won't give anything away for anyone who has it DVR'd but... whoa.


Shelly's Chocolate Almond Panini

2 slices Shelly's Almond 5 Minute Protein Cake (recipe below)
1 Tablespoon Smucker's Sugar Free Hot Fudge Topping
Panini Grill or George Foreman Grill
Pam

Slice the Almond Cake. Cooled cake works best.


Spread fudge topping between two slices of the cake and sandwich them together.


Place on a Pam sprayed grill. Grill till golden.


Shelly's Almond 5 Minute Protein Cake

1 Egg, beaten
3 Tablespoons Milk
2 Tablespoons Sugar Free Almond Torani Syrup
2 Tablespoons Canola Oil
3 Tablespoons Multigrain Pancake Mix (I use this)
2 Tablespoons Almond Meal
1 scoop Vanilla Protein Powder
Pinch salt
1 - 2 cup Measuring Cup or Microwave Safe Mug

In a measuring cup or microwave safe mug, Mix egg, milk, syrup, and oil and combine thoroughly. In a separate bowl, mix pancake mix, almond meal, protein powder, and salt. Tip dry into wet and stir till combined.

Nuke in microwave for 2 minutes (my microwave is getting old and needs 20 seconds added now.)


Let it sit for three or so minutes (it pulls away from the sides) before tipping the cake onto a plate. Yields 4-5 slices.

A super yummy dessert or breakfast.

The possibilities are endless. Banana Caramel Nut Cake with Chocolate, Peanut Butter or Mashed Banana filling. Apple Cinnamon Cake with Apple Butter or Almond Butter. Chocolate Cake with Peanut Butter or Banana. Projects for my next 3 AM insomnia bout.
