Fig and Ricotta Tortilla Pizza
I forgot I also bought a basket of fresh figs yesterday at the Farmer's Market. I used them this morning to make a sweet Tortilla Pizza for breakfast.
It was a yummy start today but it would be a great dessert finish after an Italian dinner like my Pastaless Chicken Carbonara Casserole.
Cut into wedges it also makes a nice party treat with antipasto type items. I love having little evening "parties" with just 2 or 3 people. Cut up some cheeses, veggies, make a dip out of Fage Greek Yogurt, a few cold cuts, some nuts and a little sweet treat like this pizza. With 20 minutes or so prep you have an awesome spread that you can eat too! I toss it all on a tray and bring it outside.
What could be better than cool night air, starry skies, some weight loss surgery friendly snacks and swapping stories with friends?
Wait don't answer that. I can think of one or two things ;) too but... little parties like that are right up there in the top 5.

Shelly's Fig & Ricotta Tortilla Pizza
1 Mission Carb Balance Whole Wheat Fajita Size Tortilla
1/4 cup Ricotta Cheese
1 Tablespoon Sugar Free Torani Syrup (I used SF Vanilla)
a few dashes of Cinnamon
1 ripe Fig, sliced
1 teaspoon Sugar Free Maple Syrup or Caramel Sauce
Drop of oil
Mix ricotta, SF Torani, and cinnamon together. Swipe a cookie sheet with a drop of oil and place a Mission Carb Balance Whole Wheat Fajita Size Tortilla down. Spread ricotta mixture on and top with sliced fig and a drizzle of sugar free maple syrup or caramel. Pop it in a 375 degree oven for 10 minutes.

Highlights of the day:
* Making a crazy experimental casserole which in my head sounds yummy but we'll see how it goes. Watch for porn tomorrow (or not depending on the outcome.)
* Loving this super cool web site. Word of warning stay away from the games section... I was lost in old school Frogger for an hour.
* Going to take a walk tonight and watch the sunset. I'm working and miss it during the week so I try and catch it at least one day out of the weekend. A nice long walk might help these cramps from HELL I have too. I hope.
