A day in my pouch is a series of blog posts (I try and post them every few days) to show what a typical daily menu looks like in my post weight loss surgery world.
Breakfast: Leftover grilled zucchini from dinner and a scrambled egg with a few shavings of Parmesan cheese. This would be a great breakfast for visiting vegetarian pals as an alternative to bacon and eggs.
Lunch: On an egg kick I guess. I made a batch of Egg Foo Young Bites well mushroom-less ones because I didn't have any. I just added a little more green onion and sprouts in the mix, that's the great thing about Bites they are very versatile.These heat up great (I prefer a toaster oven but microwave works too) and keep in the fridge a couple of days.
More Eggface Bites (aka Mini Crustless Quiches)
Dinner: Picked more grapes from my 2 extremely productive vines.
Made a little tidbit party to eat on the patio with some salami, Provolone, Manchego cheese (a favorite) and a little antipasto salad made from roasted red onions and peppers (425℉, sprinkle of olive oil and salt, cook till caramelized and soft), fresh mozzarella and tomatoes. No dressing, just some salt, pepper, and oregano.
Snacks: A Chike High Protein Iced Coffee made into a Mexican Iced Coffee. Packet of Chike, milk, a squirt of Sugar-Free Torani Chocolate syrup, ice, a dash of cinnamon. Blend. Top with Homemade No Sugar Added Whipped Cream and a little more cinnamon.
