Simple

Went to the Farmer's Market this morning. Loaded up on some awesome veggies. I didn't get much fruit today just a few tangelos because my apple tree is ready to be picked. Lots of great veggies though. Today's haul: Tangelos, Onions, Garlic, Cucumbers, Eggplant, Avocado, Red & Yellow Tomatoes (my garden is just about tapped out now. It was a great year!) and oodles of different Squash. Here's a pic I took of some of today's haul...


The weather was beautiful today. Not too hot. Took a long walk after the market then came home and made this super yummy lunch...


Shelly's Simple Summer Salmon Salad (say that 3x fast)

1 Salmon fillet, cooked & chilled
2 cups Cherry Tomatoes, halved (I used yellow grape & red cherry)
1 Cucumber, diced
1 Avocado, diced
3 Green Onions, diced
2 Tablespoons Fresh Basil, snipped
1/2 teaspoon Kosher Salt
a few twists of Black Pepper
2 Tablespoons Storebought Balsamic Vinaigrette Dressing

Mix all salad ingredients together till well combined. That's it. Told you it was simple.


Simple is really the theme of my summer this year. Doing lots of cheap, fun stuff around home. Enjoying family and friends, stopping to smell the roses, making wishes on stars and all that.
