It was an absolutely gorgeous day today not too hot finally. I took advantage and spent most of the day outside soaking up some Vitamin D... Got an early start and took a crazy long walk. Went to the Farmer's Market. What a haul this week... strawberries, Kyoho grapes, cherries, nectarines, summer squash, zucchini, onions, avocados, cucumbers. Hit Delaney's 100 mile Market again (a new food store in town) then came home and made this super yummy lunch.
Shelly's Mexican Crab Cocktail
1/2 cup Crab Meat (I used canned claw meat, drained)
1/2 Cucumber, diced
1 Avocado, diced
1 Tablespoon Fresh Cilantro
1/2 cup Pico de Gallo (near the salsa in the refrigerated section)
zest of 1/2 a Lime
squirt of Lime Juice
1/2 teaspoon Kosher Salt
2 Tablespoons Picante Sauce
Mix all ingredients together. Spoon into margarita glasses.
I served the crab cocktail with an assortment of cheeses and some of the yummy fruit from the Farmer's Market. A great summery & protein packed lunch.
