Strawberry Pie

Went to the Farmer's Market yesterday and as usual I couldn't pass on buying more strawberries even though I still had a couple of baskets to use from last week. So I came home and turned last week's berries into a Strawberry Pie.


Shelly's Strawberry Pie

1 9-inch baked Almond Crust (see below)

Glaze

3 Tablespoons Sugar Free Torani Syrup (I used SF Vanilla)
1/4 cup Corn Starch
1/4 teaspoon Salt
1 cup Water
1 teaspoon Lemon Juice
2 cups Strawberries, mashed (a potato masher works great)

Approximately 2 cups Strawberries, halved (enough to fill pie crust at least half way)

Topping: SF Torani sweetened Ricotta (a dollop of Ricotta with a little SF Torani mixed in)

Mix corn starch and salt in a pan. Add water, SF syrup and lemon juice. Mix well. Add berries. Mash berries.


Cook over medium-low heat stirring often until mixture comes to a low boil, thickens, and "clears."


Cook over low boil for about 3 more minutes, stirring constantly. Remove from heat and let cool.


Place halved berries in baked pie shell as evenly as possible. Pour glaze over berries and chill for at least 3-4 hours. When serving garnish with sweetened ricotta.



Shelly's Almond Pie Crust

3/4 cup Almond Meal or Flour, ground (you can grind your own)
1 1/2 scoops Vanilla Protein Powder
1 Tablespoon Butter, melted
1 Tablespoon Sugar Free Torani Syrup (I used SF Vanilla)

Mix together and press into a 9" greased pie plate. Bake at 350 for 12 minutes. Remove from oven and let cool.

I was up at the butt crack of dawn yesterday so I took advantage of it and took a loooooooong walk. The neighborhood was still asleep, the air was crisp, alone with my thoughts... it was a nice way to start the day. Came home, showered and headed to the Farmer's Market. My haul this week: garlic, yellow onions, red onions, green onions, leeks, beautiful corn (I'm going to BBQ and fix them up elote style tomorrow) I'm on a BBQ'd corn kick, strawberries and peaches.

As usual I had coffee at my favorite people & dog watching Starbuck's. Then went to the Post office and mailed the box of protein bars from the contest to the winner Debbie in Kentucky! Congratulations Debbie.

Today I took a drive to Tom's Farms up in Corona... damn it's hot up there. It's a total Harley biker hangout on the weekend. I had fun checking out all the hogs. We looked around all the stores, ate samples of cheese and fruit, ate BBQ corn (told you I'm on a kick.) They have a huge sugar free candy section so I bought a few things. I also bought some of their famous Guacamole. I think I'll make a Taco Salad tomorrow for lunch and have a dollop of it on top. Yum. It was a nice day.

I'm making Chicken Marsala tonight for dinner with sauteed zucchini. Going to eat it outside on the patio. It's beautiful out. Sunny with a nice breeze, 85 degrees. Hope everyone had a nice weekend.

Highlights of the weekend:

* Ummm Pie Hello.

* Walking forever this weekend and never needing to rest (heck never even thinking about it.) Thank God for weight loss surgery.

* I put 50 cents in the Fortune Telling Machine at Tom's Farms (remember Zoltar from Big). It starting bobbing it's head and laughing and never gave me a fortune. This somehow struck me funny. Soooooo you want answers about your future... you get NOTHING! in fact not only do you get nothing but I fart in your general direction.
