Pizza Bites

Here's yet another version of my "bites." This one tastes just like pizza and the house smells heavenly while they are cooking. If you haven't tried my other bite incarnations: think crustless quiche only way better. Everytime I experiment with these "bites" I think I've found my favorite. This one rocks!

The cute mini size makes it a great weight loss surgery friendly appetizer. They also heat up really well in the toaster oven (or regular oven) so you can make a batch and get several meals out of it.


Shelly's Pizza Bites

1/2 Yellow Onion, diced
6 Mushrooms, chopped
2 cloves Garlic, minced
1 teaspoon Butter
25 thin slices Pepperoni, diced (I used Boar's Head)
1 Tablespoon Fresh Basil, chopped
1 Teaspoon Oregano
a few twists of Black Pepper
5 Eggs, beaten
1/3 cup Tomato, diced (I used S&W canned, drained)
1 cup Shredded Cheese, Italian Blend

Preheat oven to 350 F. Saute onions in butter till golden. Add mushrooms and garlic and saute 1 minute more. Set aside to cool.

Mix all ingredients together. Be sure veggie mixture has cooled slightly before adding to egg mixture. Spoon (I use a small ice cream scoop) into a lightly greased mini muffin tin. Bake for 30 minutes or until centers are firm. Makes 24. Serving suggestion: Serve with a green salad or a scoop of Shelly's Italian Bean Salad for a great light Italian themed meal.
