The perfect meal when you are in a hurry as they take practically no time at all to prepare. I totally needed that last night... it was 7 PM before I got home, hadn't eaten yet and I just wanted to get in and out of the kitchen. This was perfect...


Shelly's Asian Lettuce Cups

3/4 lb. Ground Turkey or Chicken (about 1/2 a package)
4 Green Onions, diced
6 Mushrooms, chopped
2 Tablespoons Soy Sauce
1/2 teaspoon Garlic, crushed
1/2 teaspoon Ginger, grated
1 Tablespoon Sherry
Lettuce Leaves (Green Leaf, Bibb, Boston, Iceberg all work fine)
Cashews, chopped

Separate lettuce leaves. Wash and spin dry. Set aside. Saute all ingredients together. Use a wooden spoon to break up meat. Cook meat till no pink is seen.

Divide mixture among lettuce leaves. Sprinkle with chopped nuts. Fold and eat taco style.


Highlights of the Day:

* Yay. Fun mail. My super cool bento box arrived. Now I need to plan a picnic. Except after several unbelievably awesome days at 80 degrees we are in for rain and 50's... errr.

* Made another batch of my Mini Chocolate Protein Donuts. I brought a dozen (1/2 the batch) over to my neighbor. Here were the toppings I used this time...

(left to right) Unsweetened Toasted Coconut, Crushed Sugar Free Peppermint, Crushed Sugar Free Malted Milk Balls, Chopped Hazelnuts. I made a few plain Chocolate Glazed too.

* I'm purging, exfoliating, cleansing, whatever you want to call it. I'm clearing clutter and getting stuff together to donate or freecycle. There is something really freeing about passing on things that no longer have a place in my life to someone who needs them. That whole circle of life thing. It's all about the karma, baby.
