Halloween 2010

Hope everyone had a GREAT Halloween. My neighbors had a little get together so I threw together a costume and made an appearance. There's a new sheriff in town. Actually... I was the deputy sheriff according to my badge. Who wants to be the sheriff anyway?! He gets shot. Everyone knows that.

I came home, turned the porch light on ready for the trick-or-treating whippersnappers and made this yummy dinner. I do a version of this casserole with ground turkey that is a staple at my house. Last night I had some of those cocktail sausages and thought I'd make a little change up. It was perfect on a chilly Halloween night.

Shelly's BBQ Baked Beanies and Halloweenies Casserole

4 slices Bacon, cut in half
1/2 of a (14 oz.) package of Lit'l Smokies Cocktail Sausages, chopped
1/2 a Maui Sweet Onion, diced fine
1 Granny Smith Apple, diced fine
2 cloves Garlic, crushed
2 (15 oz.) cans Cannellini Beans, rinsed & drained
1/2 cup BBQ Sauce
a few twists of Black Pepper
Olive Oil for sauteing

Microwave bacon for 2 minutes till limp but not fully cooked. Set aside. Chop sausages in 4 pieces each, I used Lit'l Smokies, you could also use full sized smoked sausage chopped into bite sized pieces. Set aside. Saute onions till golden. Add apple and saute till they start to give a bit. About 5 minutes. Add all remaining ingredients including the sausages (except bacon) mix to combine.

Pour into Pyrex casserole dish. Place bacon slices across top. Bake at 350 for 1 hour.

I use the real deal BBQ sauce (they do make no/low sugar ones) I figure 1/2 cup spread out over an entire dish (a good 6 portions for non-ops) really just gives the beans the taste. I don't have issues with it but if you do there are some products out there. I use a combo of two BBQ sauces (a brown one and a redder one.)

We ate dinner while we watched Night of the Comet and The Amazing Race and waited for the whippersnappers who never came. Not one single trick or treater this year! I guess that is a good thing given the childhood obesity rates. Heck I remember walking home from school, dressed in my costume from our classroom party and trick or treating all the way home. What's that you say? It wasn't dark out?! I didn't care... I had no shame... like they were gonna say no to a cute bunny.



Now if you made some poor food choices this weekend or raided your kid's candy. Repeat after me... you can't rewind time, so you might as well get over it. Give away the items & start planning your next healthy meal.
