The Feast of San Gennaro is this weekend in NYC. San Gennaro is the Patron Saint of Naples, if you've seen Godfather Part II the feast of San Gennaro is the feast that is going on when the young Vito whacks the local Mafia Don Fanucci in the hallway of his apartment. Yep whacked him at a religious festival. I'm thinking he had a lot of Hail Mary's to say at confession that week ;)

Would love to be in Little Italy with the smell of sausage & peppers and listening to the Italian music but I'll make sure even 3000 miles away I'll get my Italian fix with dishes like these.

Last night's dinner...


Shelly's Chicken Bella

2 Boneless, Skinless Chicken Breasts, sliced into 3-4 pieces each and pounded flat
Italian Seasoning
Olive Oil
1 Maui Onion, sliced
3 Green Onions, diced
6 White Mushrooms, sliced
1 Portobello Mushroom, sliced
3 cloves Garlic, diced
1/2 cup Storebought Alfredo Sauce
1/2 cup Chopped Canned Tomatoes, drained (Italian Style)
2 Tablespoons Parmesan, grated
1/2 cup Mozzarella, shredded

Pound chicken breast pieces flat between plastic wrap. Brush with olive oil and sprinkle with Italian seasoning. BBQ till done. Set aside. Saute onions and mushrooms till golden. Add garlic saute 1 minute more. Set aside. Mix Alfredo sauce and tomatoes together. Spoon 1/3 into a Pyrex casserole dish. Arrange chicken on top.

Spoon second 1/3 of sauce on top. Spoon onions & mushroom mixture over chicken and top with remaining sauce and cheeses.

Bake at 350 for 30 minutes.
