Mum's Day 2009


I made my Mum a little Brunch this morning and served it to her outside on the patio. It was all weight loss surgery friendly foods because I don't cook any other way and heck I wanted to eat too ;) She loved it.

On the menu: Salmon & Zucchini Bake, Mixed Green Salad with Sweet Onion Viniagrette, Dried Cranberries & Toasted Pecans, Malibu Fruit Salad, and Raspberry Iced Tea.

Shelly's Salmon & Zucchini Bake

3 cups Zucchini, sliced thin
1 Yellow Onion, diced
6 oz. Smoked Salmon (Lox), diced
1/2 cup Spelt Flour
1/2 cup Multigrain Pancake Mix (I use this)
1/4 cup Canola Oil
5 Eggs
1/4 cup Parmesan Cheese, grated
1/2 teaspoon Marjoram
1 teaspoon Parsley
1/2 teaspoon Kosher Salt
a few twists of Black Pepper

Mix all ingredients together till well combined.

Pour into a greased Pyrex casserole dish.

Bake at 350 for 45 minutes or until toothpick inserted in center comes out clean.



Shelly's Malibu Fruit Salad

Strawberries
Blueberries
Raspberries
Frozen Pineapple
Frozen Mango
1 Tablespoon Malibu Rum (or Sugar Free DaVinci Malibu Syrup)

Wash and chop fruit. Splash with Malibu Rum (or Malibu Flavored Syrup) Don't worry about defrosting the frozen fruit by the time you eat it it'll be perfect.


Shelly's Raspberry Iced Tea

8 oz. Tejava Unsweetened Tea
Sugar Free Torani Raspberry Syrup (or any fruit flavor) to taste
Fresh Raspberrries
Ice

I had a coupon for a free 8x10 from Rite Aid and blew this one up for her.

I'm making her a special dessert tonight. If all goes well :) I'll snap some food porn for ya.
