Falafel. It’s not traditional so if you are looking for that, this is not the
recipe for you but it’s a quick, easy, and super yummy recipe when you are jonesing for something with a Middle Eastern vibe. I love it because it
uses canned chickpeas, using dried chickpeas that are soaked overnight
is more traditional but I never remember to soak beans and when I want falafel...

<p><span style="color: black;">This recipe also does not contain
cilantro which is generally found in traditional recipes. If you love cilantro, you
could certainly sub 1/2 the parsley with cilantro. I just didn’t have any on hand so all
parsley was the way I made it the first time and ever after that. This recipe might appeal to the cilantro
haters of the world (up to 20% of the population) for whom cilantro tastes
like soap. Trivia: Did you know there is a genetic reason for this cilantro hate. Apparently, in 2012, researchers at
Cornell University found that there was one specific gene (OR6A2, an olfactory
receptor) that makes some people strongly dislike the taste of cilantro. So to

You want mashed but not pureed. Add all remaining ingredients and mix well. Set aside about 3 minutes while you prepare Yogurt Dip. Beyond the weight loss, which for many increases their quality of life, multiple long-term studies show bariatric surgery can put type-2 diabetes, sleep apnea, and hypertension (a risk for heart disease and stroke) into remission and reduces the burden or risk of many other obesity-related conditions and diseases including a few cancers. <a href="https://asmbs.org/resources/estimate-of-bariatric-surgery-numbers" rel="nofollow" target="_blank">But only 1% of those who would qualify for bariatric surgery have it. </a></p><p>A few thoughts on why and this is by no means an exhaustive list... </p><div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiqhZdriER_VThs5AcXhO8OY19hPPYqbxvnGDqGsAT51ICBxwhJJao03OT03dpcRADlept3CpGUxYPS05MxAOnKeDgQz-19bYH3hN9SS47Id3iVqS-XJk1-Ziyf3Z6SuTZP9zV35irtG0Jq/s600/rny+vsg.jpg" style="margin-left: 1em; margin-right: 1em;"><img alt="Bariatric Surgery Vertical Sleeve VSG Gastric Bypass RNY" border="0" data-original-height="352" data-original-width="600" height="235" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiqhZdriER_VThs5AcXhO8OY19hPPYqbxvnGDqGsAT51ICBxwhJJao03OT03dpcRADlept3CpGUxYPS05MxAOnKeDgQz-19bYH3hN9SS47Id3iVqS-XJk1-Ziyf3Z6SuTZP9zV35irtG0Jq/w400-h235/rny+vsg.jpg" title="Most Popular Weight Loss Surgery Types" width="400" /></a></div><br /><div class="separator" style="clear: both; text-align: center;"><br /></div><p><b>Fear of surgery, fear of complications and death.</b> Let's be real. No one looks forward to surgery and this is one we can choose to have (or not.) The whole getting cut open, anesthesia, drains, tubes, pain, and recovery process sounds intimidating. </p><p>The facts are the currently used bariatric procedures are pretty darn safe. The rate of serious complications within the first 30 days is between 0.25% and 1.25% and the mortality rate is even lower for the two most popular bariatric surgeries: vertical sleeve gastrectomies (VSG) and gastric bypass (RNY.) To put this in perspective that is a lower rate than most common surgeries (including gall bladder removal, appendectomy, and knee and hip replacement surgery.) Over 90% of bariatric operations are now being performed laparoscopically (a few small incisions) so that really helps lower the complications and speeds up recovery but I had open RNY (non-laparoscopic, one long incision, slower recovery) and it was still only about 2 weeks till I was functioning pretty normally. </p><p>I think we tend to dismiss, disregard or probably just grow accustomed to the reality that for many of us obesity and obesity-related illnesses we may be dealing with <a href="https://www.cdc.gov/healthyweight/effects/index.html" rel="nofollow" target="_blank">carry risks</a> of complications and death. Many higher than the risks of surgery. Something to consider when deciding to have surgery or not.<br /></p><p><b>Suggested reading or resource:</b> Look to <a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC4843041/" rel="nofollow" target="_blank">the science</a> and studies, not your friend at work "who knew someone, who had a friend, whose hairstylist had surgery."</p><p><b>Fear of the unknown, fear of change.</b> Change is scary. I remember thinking "I know what I have to deal with now, I don't know what life is like after." Would I regret having bariatric surgery? How it would change my life? How it might affect my loved ones? </p><p>It will change your life and the lives of those you love. Those changes will be positive for the most part, the resolution of health issues and increased quality of life but it is a change. Talk to post-ops 1+ years from surgery and ask them if they regret having surgery and the answer is usually "the only regret is not having it sooner." That being said anytime you make a big life change (think about: moving, relationship changes, babies, jobs, etc.) it takes time to adjust. Those first few weeks post-op when there are lots of instructions to follow, things are different and new, you feel stressed and overwhelmed, for some their comfort/soother in times of stress was food and well that is limited... and add to this scenario that you are healing from surgery... so YES, some people express regret (akin to buyer's remorse) but ask them again in a year and you will more than likely hear the "regret not having it sooner" answer. It took me about 7 weeks or so to feel "new normal" and not like an alien life force dropped onto a new planet. By month 4, I was feeling better than ever. 14 years and still no regrets.</p><p><b>Suggested reading or resource: </b>I highly recommend finding a psychologist who works with bariatric surgery post-ops, sooner rather than later. They can help you navigate the new changes. It's confusing to even find out if you are covered. I see lots of patients ask on online patient forums if (insert any insurance company) covers bariatric surgery. The answer is: maybe. Most companies cover bariatric surgery, the question is does YOUR policy cover it (think cars: do you have the base model vehicle or the pimped out, top of the line vehicle with all the bells and whistles or something in between) and that is determined by a phone call to your insurance company and a look at your policy documents (policy sections to look for: Evidence of Coverage (EOC) or Certificate of Insurance (COI) or Summary of Benefits and Coverage.)</p><p>For those that are covered, it's still a complicated process to get approval, and frankly, health insurance carriers like it that way. Unlike other chronic disease treatments, people with obesity often have hoops to jump through like mandatory waiting periods (3-6 months is common, some even longer), mandatory diets with mandatory weight loss, extra documentation, and extra clearances. These discriminatory hoops are designed to delay and discourage patients, plain and simple and <a href="https://journals.lww.com/lww-medicalcare/Abstract/2020/11000/Do_Insurance_mandated_Precertification_Criteria.3.aspx" rel="nofollow" target="_blank">sadly it works</a>. Also as you can imagine all these hoops often mean multiple appointments, time off work for those appointments and tests, travel costs, co-pays, program fees and that is even before the time off for surgery and healing. This is a real barrier that stops people from even considering surgery. </p><p><b>Suggested reading or resource:</b> <a href="https://www.obesityaction.org/" target="_blank">Obesity Action Coalition (OAC)</a> fights for access to care and an end to weight bias they have a <a href="https://www.obesityaction.org/action-through-advocacy/access/" target="_blank">great section on their website</a> about understanding your insurance coverage, appealing denials, sample letters, glossary of terms, etc.</p><p><b>Weight bias and stigma, internalized bias, avoidance of care. </b><a href="https://assets.publishing.service.gov.uk/government/uploads/system/uploads/attachment_data/file/296290/obesity-map-full-hi-res.pdf" rel="nofollow" target="_blank">Obesity is complex</a> and there are multiple factors some may be controllable (behavioral) and many not so much and certainly not without assistance (biological, <a href="https://www.bbc.co.uk/sounds/play/m000rmp5" rel="nofollow" target="_blank">genetic</a>, environmental, medications, psychological, socio-economics, health disparities, etc.) but to hear it from society, family, friends, even sadly doctors sometimes... it's all our fault ("just eat less and move more") and so we must solve it ourselves. As you can imagine after years of this messaging people actually can begin to believe it. So much so that some people with obesity look at seeking care and treatment as shirking responsibility or "taking the easy way out." </p><p>Obesity is not your fault and you don't have to go it alone. Your health is not a game. You don't get bonus points for going it alone, struggling, or suffering more, you just get less quality of life. If your obesity is affecting your health, there are effective treatments and help. Seek them out. </p><p>Another thing I wanted to mention about weight bias is we often have way too many crappy past health care experiences (<a href="https://stopweightbias.com/stories/weight-bias-stories/" target="_blank">read one of mine: scroll to Michelle "Shelly"</a>) and avoidance of care, in general, is a result. So the idea of a bunch of appointments for months isn't too appealing for many. This is one reason even if covered many don't follow through with the process. Finding good care is key. It is out there. It's worth finding.</p><p>If you are a healthcare provider reading: please help patients understand the experience with you and your office will be different. Explain the disease and science of obesity, explain chronic disease management, explain what is in our control and what isn't. Give patients the understanding and support that many have never received. You can make such a difference.</p><p><b>Suggested reading or resource:</b> <a href="https://stopweightbias.com/weight-bias/weight-bias-in-healthcare/" target="_blank">Stop Weight Bias campaign</a>'s section on weight bias in healthcare. Great ConscienHealth blogs on the <a href="https://conscienhealth.org/tag/obesity-causes/" rel="nofollow" target="_blank">multiple causes of obesity.</a> </p><p><b>Lack of understanding of obesity and treatments. </b>Most people do believe that eating less and moving more will cure obesity. Doctors (scientists and others) need to take every opportunity to correct that misconception. There is so much more going on and perhaps if the complexity and chronic nature of obesity were shared more people would seek real care for it more readily instead of being prey to the latest diet industry fads and scams "maybe this time this (potion, sketchy pill, tea, DVD, gadget, etc.) will work" instead of seeking out science-based obesity treatments (behavioral therapy, FDA-approved obesity drugs, and bariatric surgery.) People would also understand why something that "worked" for a friend or co-worker or a celebrity on TV doesn't mean it will be the right treatment for them. </p><p>I've also heard comments like "why should I have surgery when people just gain it back." First, bariatric surgery benefits are more than weight loss. There is, of course, a lot of weight loss but even after bariatric surgery bathroom scales still go in both directions. Be sure you have realistic expectations of what treatments can and can't do (there is no cure or finish line.) Obesity is a chronic disease and like any chronic disease needs managing for life. I am sure you have heard the saying bariatric surgery is a tool. It is a tool that requires maintenance, taking into the shop for tune-ups and you may need to use a few different tools over time. I have even made them for parties as an appetizer to rave reviews and cleared platters. It turns off when the egg bites are ready which is basically when the water in the bottom well is evaporated and the "Egg Bites" are done. We're only going out for essentials like food or medicine but even then I'm going to try and avoid it if possible. I had a pretty good food supply in the freezer and pantry so I've been cooking up some tasty meals so far... we'll see what happens in a couple of weeks it might be another story. I do have a couple of mysterious packages in the back of the freezer it might come to using those. Well... we could have a contest to guess what it is. LOL.<br />

Last night's quarantine kitchen meal was a layered Spaghetti Squash Lasagna type situation. It was delicious and I'm looking forward to lunch leftovers. <b>Shelly's Spaghetti Squash Lasagna</b><br />
<br />
1 Spaghetti Squash, cooked<br />
Salt and Pepper to taste<br />
1/2 teaspoon Oregano<br />
<br />
3/4 to 1 cup Tomato Sauce (I used storebought Rao's Tomato Basil)<br />
<br />
1 cup Ricotta Cheese (I used whole milk)<br />
1 Egg, beaten<br />
1/4 cup Parmesan, grated<br />
1 teaspoon Oregano<br />
1 teaspoon Basil<br />
1/2 teaspoon Garlic Powder<br />
a few twists of Black Pepper<br />

1/4 cup Mozzarella Cheese, shredded<br />

Half and deseed the spaghetti squash. OVEN: Place open end down on a Pyrex baking dish, pour 1/4 cup of water in dish. Cover with foil. Bake in a 400-degree oven for about 40 minutes or MICROWAVE: Place open end down on a Pyrex baking dish, pour 1/4 cup of water in dish and microwave for 15 minutes or so. You want a fork to insert easily. Allow to cool slightly. Use two forks to shred the flesh of the cooked squash into "spaghetti." Add salt and pepper to taste, 1/2 teaspoon of oregano. Spread evenly in a <a href="https://www.amazon.com/Pyrex-Bakeware-2-Inch-Scalloped-Plate/dp/B0000CF3U9/ref=as_li_ss_tl?keywords=deep+dish+pyrex+pie&qid=1584896633&sr=8-3&linkCode=ll1&tag=theworlda074c-20&linkId=fd0db8de370bcde2a43ea5179ab0556c&language=en_US" target="_blank">deep-dish pie plate</a> or casserole dish.<br />

Spread tomato sauce on top evenly. Mix together remaining ingredients (except Mozzarella) till well combined and spread evenly over the tomato sauce layer. Top with Mozzarella. Place in a 400-degree oven for 30 minutes. I broil the top for about 2 minutes more to get little golden brown cheese spots.<br />

juice of 1/2 a Large Lemon<br />
1/4 cup Water<br />
2 cloves of Garlic, peeled<br />

This recipe serves 3-4 people a nice sized dollop. You can double the batch. Lasts several days in the fridge.<br />

<b>Cook notes:</b> I prefer a little texture to my hummus but for super creamy hummus fans microwave the chickpeas for 3 minutes before blending them. Find Tahini in middle eastern markets, kosher food sections, sometimes near peanut butter in regular markets. I buy mine at Trader Joe's it's near the dressings. You can't leave the Tahini out it's what makes hummus, hummus.<br />

It's usually 80's or 90's songs that I haven't heard in forever but still somehow remember every word to. That's a life mystery right there... why is it I can recall every lyric to a 30-year-old song playing in the store but have trouble remembering things I'm supposed to buy without a shopping list?! True confession: I have actually taken another turn around the store even though I've done my shopping in order to finish a particularly great song all while trying to restrain myself (sometimes unsuccessfully) from breaking out in song.<br />

The other day as I was holding back bursting into a rousing rendition of a Duran Duran hit. I spotted this product in the frozen section: Trader Joe's Egg Frittata with Swiss Cheese and Cauliflower. I scanned the protein-packed ingredient list and ooooh cool it looked like something that would work on my plan. I tossed a box in my cart. They were $2.99 for a pack of 2 teacup saucer-sized frittatas. 12 grams of protein and just 5 grams of carbs per frittata. They were super convenient (you just heat in the microwave from frozen) and tasty. Perfect breakfast on-the-go or add a veggie or salad for lunch or dinner.<br />

As I was eating them I thought I really need to try and recreate these... they are super similar to the <a href="http://theworldaccordingtoeggface.blogspot.com/2009/10/party-time-confetti-bites.html" target="_blank">Egg Bites</a> I make. I scribbled down the basic ingredient list before I tossed the box out... eggs, onions, cauliflower, swiss cheese, chives and a week later I experimented and came up with this copy cat, knock-off version. They were pretty darn close, super yummy and will be on permanent rotation at my house.<br />

<b>Shelly's Cauliflower Cheese Egg Bites</b><br />
<br />
1 (10 oz.) Frozen Package Riced Cauliflower (I used Birds Eye Steamfresh Cauliflower with Italian Cheese added*)<br />
1 Yellow Onion, diced<br />
5 Eggs, beaten<br />
1/3 cup Shredded Gruyere Cheese (Swiss will work too)<br />
3 Green Onions, diced (I didn't have chives)<br />
1/2 teaspoon Onion Powder<br />
1/2 teaspoon Salt<br />
a few twists of Black Pepper<br />

Cook Riced Cauliflower per bag instructions. Empty into a mesh strainer. Set aside to allow to drain and cool. I used Italian Cheese seasoned riced cauliflower *If you use plain I'd add a Tablespoon or 2 of grated Parmesan Cheese. Saute yellow onion till golden. Set aside to cool slightly.<br />

Preheat oven to 350.<br />

Mix all ingredients together. Bake for 30 minutes at 350. Let them cool a few moments they pull away and pop right out. Makes 24. Keep in fridge for several days, they reheat great in the microwave or toaster oven... or freeze.<br />

I love my little Christmas tree of memories. Every ornament tells a story. It's like old pals visiting each year when I open the boxes. Speaking of ornaments... does anyone else have a spider ornament on their tree? When people see ours I am always asked about it. Did I forget to put away some Halloween ornament or something? It's actually based on a Ukrainian folk story of where tinsel originated. I'm 1/2 Brit and 1/2 Sicilian but I love stuff like this... basically, the story goes... a family had no money for decorations for their Christmas tree and while the children were sleeping, all the spiders in the house spun webs of silver around its branches. When the family awoke Christmas morning, the tree was sparkling with silver webs. A magical gift! So that's why I have a spider ornament.<br />
<br />
I seem to add one ornament a year but I have to say this might be the last year I do that or I might have to move up a tree size. This year, I added a globe because I spent a lot of the last 2 years traveling on behalf of the OAC as I served as chair of the National Board of Directors and meeting new friends and fellow patient advocates around the world. I will always remember this time, new friends and those trips when I hang it each year.<br />

I also cooked a bit (this is a cooking blog after all.) I made a batch of Christmasy Italian Ricotta Cookies. These are sugar-free so my fellow bariatric pals should give them a try.<br />

<b>Shelly's Sugar-Free Italian Ricotta Cookies </b><br />

1 cup Almond Flour (blanched, not meal)<br />
2 Tablespoons Coconut Flour<br />
1/2 teaspoon Baking Powder<br />
1/8 teaspoon Sea Salt<br />
1/4 cup Butter, softened<br />
1/4 cup Whole Milk Ricotta Cheese, drained <br />
1/4 cup Swerve, Granular (erythritol)<br />
1 Large Egg, beaten<br />
1 teaspoon Vanilla Extract<br />

The night before: drain the ricotta cheese. Place a <a href="https://www.amazon.com/Cuisinart-CTG-00-3MS-Stainless-Steel-Strainers/dp/B007TUQF9O/ref=as_li_ss_tl?ascsub&cv_ct_id=amzn1.osp.d38857fe-da98-40e1-a93d-13061835fadc&cv_ct_pg=search&cv_ct_wn=osp-search&keywords=fine-mesh+strainer&pd_rd_i=B007TUQF9O&pd_rd_r=20142f31-0ec3-4d01-9648-22a9f319e66d&pd_rd_w=03yIg&pd_rd_wg=LBsUC&pf_rd_p=5200041d-b78d-4014-8543-e0892abec068&pf_rd_r=NJMRWSR5C8BN0GYE4M61&qid=1577355084&s=home-garden&linkCode=ll1&tag=theworlda074c-20&linkId=e7c8fbf0232d4a8b53280ee73a633d00&language=en_US" target="_blank">fine-mesh strainer</a> over a small bowl, add the ricotta, spread the ricotta into an even layer. Loosely cover the bowl with plastic wrap, and chill in the refrigerator. Let the ricotta cheese strain at least 6-8 hours. Discard the liquid that drains. <br />
<br />
Preheat oven to 325. Line a baking sheet with <a href="https://www.amazon.com/Reynolds-Kitchens-Parchment-SmartGrid-Non-Stick/dp/B00K282KY4/ref=as_li_ss_tl?keywords=parchment+paper&qid=1577355141&s=home-garden&sr=1-11&linkCode=ll1&tag=theworlda074c-20&linkId=f7fe308e5e373286fd3e52ee335277cf&language=en_US" target="_blank">parchment paper.</a> Mix together the almond flour, coconut flour, baking powder, and salt. Cream softened butter and the drained ricotta with the Swerve until well combined. Mix in the egg and vanilla extract. Add dry ingredients and mix until the dough comes together.<br />
<br />
Roll the dough into 1 to 1-1/2 inch balls and place 1 inch apart on the prepared baking sheet. Press the balls down with the palm of your hand to about 1/2 inch thick. <br />
<br />
They puff a bit but don't spread much. Bake 25 minutes, until just barely beginning to firm up and are lightly golden on the bottom. Look for golden edges. Remove and let cool on the pan. They are too soft to handle when they first come out of the oven but will firm more as they cool. Makes 16-20 cookies. They are great plain but you could drizzle them with melted sugar-free chocolate or the traditional lemon glaze and sprinkle with nonpareils. <br />

3 Tablespoons Swerve, Confectioners<br />
1 Tablespoon Milk, any<br />
1/8 teaspoon Lemon Extract <br />
Holiday Nonpareils (optional)<br />

<b>Cooks Notes:</b> That drained Ricotta Cheese is also super yummy as a savory spread on cucumber slices with a sprinkle of <a href="https://www.amazon.com/Bagel-Spice-Sea-Salt-Flakes/dp/B0056GPXT6/ref=as_li_ss_tl?keywords=bagel+spice&qid=1577280279&s=grocery&sr=1-8&linkCode=ll1&tag=theworlda074c-20&linkId=dd47fe4ea3a20ca8c668393d60d24734&language=en_US" target="_blank">Bagel Spice</a> or Italian Seasoning. So make a little extra. This cookie recipe is sweetened with erythritol (the brand I used is <a href="https://www.amazon.com/Swerve-Sweetener-Bakers-Granular-Confectioners/dp/B00AMPEPVS/ref=as_li_ss_tl?keywords=swerve&qid=1577280325&s=grocery&sr=1-4&linkCode=ll1&tag=theworlda074c-20&linkId=aec6c6090b18bed1f69954737bc77762&language=en_US" target="_blank">Swerve</a>) which tastes sweet and acts similar to sugar in recipes, no calories or net carbs and works in my plan. You could use sugar but watch the cooking time as the real deal browns quicker.<br />

It's raining here... so we're staying close to home, we have some holiday movies to watch and tidbits (cheeses, meats, dips, etc) to eat. Yesterday, we had a great seafood feast as part of the Feast of the Seven Fishes, a Sicilian Christmas Eve tradition. We had 4 fishes, not 7 this year but they were delicious and very bariatric surgery friendly: Grilled Scallops, Shrimp Scampi, <a href="http://theworldaccordingtoeggface.blogspot.com/2016/12/healthy-and-easy-holiday-party-recipes.html" target="_blank">Red & Green Shrimp Cocktail</a>, and a new stuffed mushroom recipe with Crab. It was soooo good. I'll be sure to share it soon on the blog. <br />

1 cup Ricotta Cheese<br />
1/4 cup Parmesan, grated<br />
1 teaspoon Oregano<br />
1/2 teaspoon Garlic Powder<br />
a few twists of Black Pepper to taste<br />
1/4 cup Tomato Sauce<br />
1/4 cup Mozarella, shredded<br />
1/8 cup mini Pepperoni Slices (*optional)<br />

Clean and carefully remove the stem from each mushroom cap (save for soup) place in a lightly oiled <a href="https://www.amazon.com/Good-Cook-Inch-Biscuit-Brownie/dp/B0026RHHYC/ref=as_li_ss_tl?keywords=11+x+7+cooks&qid=1568302621&s=gateway&sr=8-1&linkCode=ll1&tag=theworlda074c-20&linkId=493e1c41b40716aef7d3bd41ed2c556f&language=en_US" target="_blank">baking pan</a> in a 350 oven for 15 minutes. Remove for oven and carefully (hot) empty mushroom juices that have expelled from the mushrooms. Set mushrooms aside while you make the filling. Blend ricotta, parmesan, and seasonings together till well combined.<br />

Fill each partially cooked mushroom cap with ricotta filling mixture. Top with a tablespoon of tomato sauce, shredded mozzarella, and optional mini pepperoni or another topping of your choice (sliced black olives and cooked crumbled sausage are great too.) Bake for additional 15 minutes.<br />

Hot is normal for my neck of the woods but muggy is not. Usually, the breeze kicks up in the afternoon and temperatures drop pretty quickly... like 30-40 degree drop from daytime temps. It hasn't been doing that but finally, last night felt a little different... a beautiful cool breeze kicked up. More please Mother Nature. I'm so done with summer. 1 Egg, beaten<br />
3 Tablespoons Milk<br />
2 Tablespoons Liquid Sweetener<br />
1 Tablespoon Canola Oil<br />
3 Tablespoons Multigrain Pancake Mix, dry<br />
2 Tablespoons Almond Flour<br />
1 Tablespoon Sugar-Free Lemon Pudding Mix, dry<br />
1/4 cup Premier Protein 30 g. Vanilla 100% Whey Protein Powder<br />
Pinch salt<br />
1/4 cup Fresh Blueberries (frozen work great too if you are still some months away from fresh in your neck of the woods)<br />

Mix egg, milk, sweetener (I used Sugar-Free Vanilla Syrup you find in coffee aisle, you can use maple syrup, honey, whatever you love) and oil (applesauce or cottage cheese can sub for oil but 1 T divided between 12 muffins is really not a lot) and combine thoroughly. In a separate bowl, mix pancake mix, almond flour, pudding mix, Premier Protein 30 g. Vanilla Milkshake 100% Whey Protein Powder and salt.<br />

Tip dry into wet and stir till combined. Pour into a non-stick mini muffin pan that has been sprayed with non-stick cooking spray. Place 3 fresh blueberries in each muffin.<br />

You can break-up a head of cauliflower into florets and pulse the florets a few at a time in a <a href="https://www.amazon.com/Cuisinart-DLC-2ABC-Mini-Prep-Processor-Brushed/dp/B0000645YM/ref=as_li_ss_tl?&linkCode=ll1&tag=theworlda074c-20&linkId=a6817108cdfd2d83fd9c707fd4e2e5f6&language=en_US" target="_blank">food processor</a> until reduced to the size of rice grains or use pre-riced cauliflower (fresh or frozen) which is way less work and less cleanup. If you have a Trader Joe's around they carry both the fresh and frozen pre-riced cauliflower. Most major supermarkets carry them as well as larger stores like Walmart and Target. A favorite of mine is Green Giant steamer bags of riced cauliflower, plain or some have added veggies. Birds Eye has some steamer bags that are seasoned. Steamer bags make dinner super easy because there is less to clean-up.<br />

1 (12 oz.) Steamer Bag of Cauliflower Rice (cook as directed)<br />
1 Yellow Onion, chopped<br />
1 Bell Pepper, diced (any color, I used 1/2 red and 1/2 green for color and flavor difference)<br />
1 Small Zucchini, diced<br />
10-12 Medium (uncooked, peeled and deveined) Shrimp, chopped<br />
1 teaspoon fresh Garlic, minced<br />
1 teaspoon Fajita or Taco Seasoning (Cumin, Oregano, Chili blend)<br />
Salt to taste<br />

Microwave cauliflower rice steamer bag per package directions and set aside. Saute onions, peppers, and diced zucchini in a drizzle of olive oil till tender and slightly golden. Add seasoning and shrimp until they just turn pink, 3 to 5 minutes depending upon their size. I like to chop the shrimp a bit so more bites have shrimp in them and they cook faster. You can leave them whole if you prefer. Add steamed cauliflower "rice" to the pan and stir till well combined. Cook till warmed through. Add salt to taste.<br />

Preheat oven to 325. Line a baking sheet with parchment paper. Mix together the almond flour, coconut flour, baking powder, and salt. Cream softened butter and peanut butter (crunchy or creamy, whatever you love, just watch added sugars) with the Swerve until well combined. Mix in the egg and vanilla extract. Add dry ingredients and mix until dough comes together.<br />

Roll the dough into 1 to 1-1/2 inch balls and place 1 inch apart on the prepared baking sheet. Press the balls down with the palm of your hand to about 1/2 inch thick and press the tines of a fork in a crosshatch pattern on the top.<br />

Mix all ingredients together. I use whole milk ricotta, if you use part skim, drain first. Spray pan with non-stick spray. Spoon a dollop of the mixture into pan and pat flat. You'll want some bigger circles and some smaller for your snowman or snowwoman's head. Cook on low till golden, flip, pat flat, cook till done. Gather your snowpeople parts and let everyone build their own. Makes enough for about 7-8 snowpeople.<br />

I use Swerve as the sugar replacement, it's made mostly of Erythritol, found in a lot of sugar-free gums and mints, you can find it in most health food stores or I added an online link below, it comes in Granular, Confectioners and Brown and measures the same as regular sugar. It doesn't seem to cause gastric issues some sugar replacements cause but you don't test it by eating the whole batch of cookies in one sitting. I cut out some of the ingredients that I try and limit on my plan in this recipe. So they should be a great holiday treat for those of you that are on a keto, low carb or diabetic diet but of course, as always run them by your health professionals for their thumbs up... better yet bring them a batch.<br />

Preheat oven to 325. Line a baking sheet with parchment paper. Mix together the almond flour, coconut flour, baking powder, and salt. Cream softened butter with the Swerve until combined. Mix in the egg and vanilla extract. Add dry ingredients and mix until the dough comes together. Roll the dough into 1 to 1-1/2 inch balls and place 1 inch apart on the parchment lined baking sheet. Press the balls down with the palm of your hand to about 1/2 inch thick.<br />

They puff a bit but don't spread. Bake about 18-20 minutes, until just barely beginning to firm up and are lightly golden on the bottom. Remove and let cool on the pan. They will firm as they cool. Makes 16-20 cookies.<br />

A few years ago it was held in San Diego, which is the closest major city to my town and I worked in a booth for the <a href="https://www.obesityaction.org/" target="_blank">Obesity Action Coalition</a> (didn't attend sessions or meetings) and then last year it was in the Washington DC/Virginia area and just before I became OAC Board Chair so they sent me to learn and meet the folks we interact with on common projects. I attended some super interesting scientific sessions most of which were over my head a bit but I asked a lot of questions and gained a better understanding of the science of obesity... honestly it was empowering to hear from world-renowned scientist from all over the globe all saying it is not just "eat less and move more" which is sadly what much of society and the media portray it as. Personal responsibility for healthy behaviors is just one aspect and so much more is at play (brain signals, gut hormones, environment, and on-and-on.) Now how to get that message out to the general public... so that those affected aren't faced with the stigma and bias that obesity is all their fault... I'd love to hear your ideas!<br />

I feel more comfortable going this year since it's my second one. I'll be tweeting, of course, <a href="http://www.twitter.com/eggface">www.twitter.com/eggface</a> from some of the sessions and meetings and Tuesday I'm on a panel sharing my personal story and ways people treating obesity can make the experience better for people affected who choose to seek treatment. I hope what I share makes them more aware of the impact they can have (both good and bad.)<br />
