Post Weight Loss Surgery Menus: A day in my pouch

A day in my pouch is a series of blog posts to show what a typical daily menu looks like in my post weight loss surgery world. Yesterday's healthy and delicious menu...

Breakfast: Cottage Cheese Double with Pineapple (love these) and a couple of Quest Bar "Cookies". Did I tell you I once had 3 in a row that had no pineapple in the cup? I wrote to the company and they sent me a link (that didn't work) to a $2 off coupon (not the best customer service) so since then whenever I peel back the foil I feel like I won something when I see the little golden glow of pineapple.

Lunch: I made a batch of red quinoa in the middle of the night, put it in the fridge and later I used 2 cups to make my Quinoa "Burger" Patties. Since I'm not the best sleeper, I often just get up and cook things at 3 o'clock in the morning. If Food Network ever needs some overnight programming... Insomnia Cooking with Shelly ;) I make a few versions of these patties... if you are a good sleeper LOL and you want to skip the making of the quinoa the ones I make with Path of Life frozen Mediterranean Quinoa (that only takes 4 minutes in the microwave) are great too. I usually make a Greek yogurt dip for them but I had an avocado that ripened quicker than I anticipated so I served the patties with a dollop of guacamole.

If you take part in Meatless Monday this is great for that, or if you have vegetarian pals coming to dinner, these are great alternatives to hamburgers with all the same fixins: cheese, lettuce, tomato, red onion, pickles, etc.

Dinner: I had picked up a package of chicken breast tenders and planned to make Chicken Marsala but I totally forgot to buy mushrooms at the Farmer's Market on Saturday. "Oh no I don't need to make a list, I'll remember everything." Famous last words. It worked out though because all the neighborhood BBQ smells made me want to BBQ too. So I tossed the chicken on the grill along with some sliced zucchini just swiped both with some olive oil, a sprinkle of Greek seasoning and a few twists of black pepper. When they were done I sprinkled shaved Parmesan cheese on the zucchini and drizzled warmed, store bought, balsamic dressing (just nuke it for 25 seconds) on the chicken. Easy, healthy and delicious and bonus... I have leftover chicken for lunch today.

Snacks: Coffee and perfect finish to a tasty day a slice of Pretty in Pink Microwave Strawberry Protein Cake with strawberries and homemade, no sugar added whipped cream. Do you remember Crunch Berries cereal? This cake totally tastes like that.

Hey there Michelle! I have a question but please don't think I am being judgy. Just asking because I know a lot of the cottage cheese doubles like this have a lot of sugar. Of course if you are not having carbs and lots of sugar in the first place moderation is a great thing. Is this brand in particular less sugar then lets say Breakstone? Or does it taste better or is more along the "organic" Just wondering :) Thanks!

Hey Michele, No ask away... milk sugar lactose is different than added sugar (what is in the pineapple topping) with the new nutrition label we'll be able to differentiate better between the two... added is what you want to avoid or limit. It's not a whole lot in my day and I have no issues with it (they LOL don't give you a lot of it when it's not missing that is)

FYI Knudsen is Breakstone's on the west side I believe... both Kraft owned.
