Shelly's Triple Berry Protein Shake

1 packet Celebrate Vitamins Strawberry ENS Protein
1 cup Milk (any) or Water
1/4 cup Frozen Cherries
1 Tablespoon Sugar Free Raspberry Torani Syrup
a few cubes of Ice

Blend on high.

Lunch: I've been trapped inside a lot this week so I made a promise to myself I would eat lunch outside. So I filled my bento box up and took it on the patio.


Pink Box (top left): Shelly's Bruschetta Lentil Salad
Green Box (top right): Mango
Blue Box (bottom left): Caprese Salad Skewers (Basil, Tomato, Fresh Mozzarella, Oregano, Salt & Pepper)
Orange Box (bottom right): Wasabi Roasted Edamame


Shelly's Bruschetta Lentil Salad

2 cups Cooked Lentils
2 Green Onions, diced
1/2 cup Store-bought Bruschetta Sauce (refrigerator section, near fresh pasta, Trader Joe's or Buitoni, etc)
1/4 cup Crumbled Ricotta Salata Cheese
Salt and a few twists of Black Pepper to taste

Mix together till well combined. Make plenty this tastes even better the next day and non-ops will love it.

More Eggface Bento Box Lunches

Dinner: Philly Cheesesteak was one of my pre-op favorites of course back then I would eat a 12 inch roll with Wise Chips followed up with a couple of Tasytykake Krimpets washed down with a Frank's Black Cherry Wishniak Soda. Now I was happy as a clam with a dollop of my quick saute. Way less calories and carbs but still delicious.


Shelly's Quick Philly Cheese Steak Saute

1 Yellow Onion, sliced
1 Green Pepper, sliced
1/4 pound (about 4 slices) Lower Sodium Roast Beef (I love Boar's Head brand)
1 Tablespoon Worcestershire Sauce
a few twists of Black Pepper
a couple of slices of Provolone Cheese

Saute the onions and peppers till soft. Add remaining ingredients (except cheese.) Saute till warmed through. Top with cheese slices and place under the broiler till gooey and bubbly.

On days I have more time I make a yummy Philly Cheesesteak Casserole, Philly Cheesesteak Stuffed Peppers and Philly Cheesesteak Bites. Can you tell I love Philly Cheesesteak?!

Snacks: Too much Coffee as usual and a bunch of Grapes. I have 2 grape vines at the end of the yard and it's a very good year. I'm trying to eat them before the birdies spot them.
