Get Cooking with Eggface Giveaway

I love to cook. It's my creative outlet. I was scared that having weight loss surgery would put an end to my days in the kitchen but happily it did not. I actually get to be even more creative by analyzing a favorite recipe and seeing where I can make changes to make a healthier version of a pre-op favorite. I think if you have read the blog for any length of time you know that cooking and having fun in the kitchen does not end with surgery. In fact, it gets even better. To celebrate that...

The Prize: A bunch of fun stuff for the kitchen including a Cup Grater, Spatula, Colander, Egg Slicer, Mini Measuring Cup, 12 cup Mini Muffin Tin, Julienne Peeler (you must make my Pasta-less Turkey Bolognese) and a few ingredients I use in my post weight loss surgery baking: Multigrain Pancake Mix, Almond Meal, and 1 Mini Sampler Set of Sugar Free Torani Syrups (4 - 150 ml mini bottles in SF Caramel, SF Raspberry, SF Vanilla, and SF Hazelnut) PLUS... an email gift card for $25 to Amazon.com

If you are a post-op and have a favorite post weight loss surgery food, I'd love to hear what it is (leave that in the comments too.) Scroll down to # of comments to leave yours.

Monday, December 3rd. I'll draw a name using a random number generator and announce the winner here on the blog! I will also email the winner at the address posted. Honestly my favorite postop favorites are ones I've learned from you. I know that is probably boring and a huge snore-fest but it's true. I make the little "cupcake" things all the time. I've done my own version of the cheeseburger one and also just a lot of basic ones like canned chicken breast with black beans and mozzarella on top. I love the crisp of the eggroll wrap and they aren't too high in carb for my postop diet.

I also loved the ricotta bake and for my postop puree stage I absolutely lived by it. I love italian food, especially spaghetti or lasagna and this really reminds me of it. I've made it a few times even though I am 5 months postop now and can eat real food but I just love the way it resembles lasagna without the carbs. I don't NEED the noddles, I just layer some ground beef in the bottom and it gives it a nice lasagna taste without the pasta!

And also to kick the sandwich cravings in the butt I just use hydroponic lettuce.

But to be honest there are SO MANY RECIPES I wish I could try of yours but don't have the necessary tools. The almond flour here costs $10 and I can't afford it! I also don't have about half the other materials that I wish I could have to do what you do, even though most of it can be substituted.

Hello Shelley, Oh I love kitchen gadgets and cooking too. I'm just starting to experiment with them for post-op. So far my favorite post-op food is deli meat roll ups with 2% cheese. Easiest way for me to get the protein in.

Like you, I have loved experimenting with foods I have always made to help them better fit my post-gastric bypass lifestyle. One thing I tweaked for Thanksgiving this year was "candied" yams. I mashed up my cooked yams and thinned them with pineapple juice and molasses. To finish them up, I added a bit of butter and chopped, roasted macadamia nuts. Delicious!

There wasn't much support; the groups I went to were full of people interested in helping each other 'cheat' or were too involved in drama and competition. Even my surgeon didn't seem to understand I needed support; he told me to simply "Eat foods. Make sure you do a breakfast, lunch, and dinner. Don't buy protein, it's a waste of money." I felt so very, very alone and so scared of mistakes. THEN I FOUND YOU AND YOUR MAGNIFICENT BLOG! And not only are you here to lead the scared confused masses (like myself), but you make it so much fun and share so much of yourself! THANK YOU SO MUCH FOR ALL YOU DO AND FOR BEING STRONG FOR EACH OF US WHEN WE CANNOT BE!!! <3 <3 <3

Oh my - this giveaway is fabulous! I am five weeks post-op, and I think my favorite food so far is beans lol! They sit well with me, taste good, and the protein is a plus. My sister made an appetizer for Thanksgiving with refried beans, fat-free sour cream, and fat-free cream cheese. It was nice to be able to have a couple bites and still feel like I was part of the group.

you have such great ideas Shelly.I am only 6 months out and I like to take a low carb tortilla soft shell and sprinkle some 2% colby jack cheese on it and heat it in the microwave for 30 sec. then add 6 slices of chicken lunch meat and a sandwich staker pickle and wrap it all up for my lunch.

My favorite post surgery food is shrimp and broccoli garlic alfredo with low-carb pasta or zucchini in place of the pasta. I have a very active lifestyle therefore a little bit of carbs helps me a lot. Alfredo is less acidic than other sauces so easier on my tummy. Shrimp is just an amazing food for me. Has gone down perfect each time I have had it post-op. I too love to cook and enjoy it even more now that I challenge myself to find a healthy alternative to my favorite foods!

Pumpkin Whip:

A fluffy and light alternative to pumpkin pie and every bit as wonderful! This super simple and no-cook whip is fabulous when sandwiched between two super thin crisp pizzelles that I pick up at the Whole Foods Market bakery. This recipe was inspired by a dish created by Linda Farnsworth, our Creative Food Director.

Ingredients:
One, 1-ounce package Jell-O Sugar-Free Instant Butterscotch Pudding mix
1 ½ cups 2% milk
1 cup Libby’s 100% Pure Pumpkin
1 teaspoon pumpkin pie spice
1 ½ cups frozen whipped topping, thawed
Pecan pieces (garnish)
Cooking Instructions:
In a large bowl beat together the pudding mix and milk until thick. Stir in pumpkin puree, and spices. Fold in whipped topping. Cover and chill for at least two hours. Scoop into dessert dishes and garnish with pecans.

Servings: 8

Nutrition facts per serving (without pecans): Calories 80, Total Fat 4g, Carbohydrate 11g, Protein 2g
