I love to take a couple with me when I'm going to coffee with pals since Starbucks has NOTHING for us in their bakery case when everyone is gobbling up goodies I can breakout my healthier delicious treat (but better bring extras to share, non-ops love them too.)
1 Egg, beaten
3 Tablespoons Milk
2 Tablespoons Sugar Free Vanilla Torani Syrup
1 Tablespoon Canola Oil
3 Tablespoons Multigrain Pancake Mix
2 Tablespoons Unsweetened Cocoa (Hershey's is what I used, baking aisle)
1 scoop Chocolate Protein Powder
Pinch salt
Mix egg, milk, syrup and oil (applesauce or cottage cheese can sub for oil but 1 T divided between 12 muffins is really not a lot) and combine thoroughly. In a separate bowl, mix pancake mix, cocoa, protein powder and salt. Tip dry into wet and stir till combined. Pour into a non stick mini muffin pan that has been sprayed with Pam.

Sugar Free Candy Cane Bits (Bob's found them at CVS, Walgreens)
Sugar Free Malted Milk Ball
Macadamia Nuts
Sugar Free Caramel (Smuckers)
Almonds
Instant Coffee Crystals
Cinnamon
Frozen Strawberry

I get sugar free malted milk balls my local Winco Foods supermarket. If you Google them though there are lots of online sources... Fiji catalog sells them I know and I think Vermont Country too.

Made these for MY Christmas morning treat. Loved that they are chocolate and each one a different surprise. I used some blackberries that are super sweet here right now, and s/f coconut, 1/2 tsp. of peanut butter , and cinnamon topping some.
The final compliment that made them super yummy to me, was a drizzle of s/f carmel topping.

Michelle, these look amazing. I just have one quick question. I am about 2 months shy of having the RNY, (working on insurance quals), and I've heard people say that you can't let the protein powders get over 130 degrees. Obviously I misunderstood, I guess, or is there something I'm not getting? I'm an extreme newbie to all of this and just trying to understand the ins and outs of it all. Thank you for your blog and your pins on pinterest. I am learning so much from you and your experiences!! You are a blessing in this "maze" of my life! lol Missie
Hi Missie, Best wishes on your surgery! Cooking protein changes the texture... like scrambling eggs versus raw... same protein (scientifically ever so slight denaturing) but different form.
Sashimi versus cooked fish is the same idea.
