Casserole Comfort

My super easy protein packed dinner last night... 10 minutes of prep, toss it in the oven and in 30 minutes you have an awesomely simple, Spanish inspired, you'll want to lick the plate clean, super yummy comfort food casserole. Soooo good. I ate it as is but it would be great with a green salad or cucumber salad or for hearty eater non-ops made into a burrito with a dollop of Greek yogurt.

I sat outside and ate it under the electric stars. Great meal. Cool breeze. Nice night.

Shelly's Chorizo Casserole

1 Maui Onion, diced (Vidalia would work too)
5 oz. Mexican Style Chorizo Sausage
7 Chicken Tenders, cut into 2" cubes
1 (15 oz.) can Chick Peas, rinsed & drained
1 (15 oz.) can Cannelini Beans, rinsed & drained
1 (15 oz.) can Chopped Tomatoes, drained
1 Tablespoon Multigrain Pancake Mix (I use this)

Preheat oven to 350. Remove the sausage from it's casing and saute in a skillet for 5 minutes over medium heat, crumbling the meat as it cooks. Use a wooden spatula to break up. Add onions and cook till translucent. Add chicken and cook till no pink is seen. Add remaining ingredients and mix till combined and slightly thickened.

Pour into a Pyrex casserole dish and bake for 30 minutes.
