Pancakes and Plumbing

I was feeling like I needed holy water spritzing and sage burning at my house this weekend. A little negative energy cleansing ritual. Things were breaking left and right and I just felt kind of blah. Most of the weekend was spent dealing with my on-going plumbing saga. The brand new Price Pfister lavatory faucet I purchased and had installed (among a zillion other plumbing jobs I had done this past week) is faulty and leaking under the sink. The company is FedEx-ing me a replacement but of course I will have to pay for installation again. Took three visits to figure out the issue. So hopefully fingers crossed when I get the new faucet all will be well.

Then the computer router decided to die. Several hours of trouble shooting to figure out that was the culprit. Then the coffee pot (not my Keurig, just the regular pot) decided to kick the bucket. It was just that sort of weekend.

It wasn't all bad... Friday night I listened to a couple of great local bands play. Saturday morning I hit the Farmer's Market as usual. The Kyoto Grapes are back. Yum! I also bought squash, onions, peppers, peaches, apples and strawberries.

I came home and roasted the onions and peppers while I waited for the plumbers to show. I had to laugh when the plumbers walked in, they both said at the same time, "OMG this house smells AMAZING." I guess in the plumbing business you could be faced with some interesting smells. My roasted veggies must have been a pleasant surprise in their world.

The apples from the market became this great breakfast Sunday AM. I wish the old adage was "an apple a day kept the plumbers away." I'd gladly eat this yummy breakfast every morning.

Shelly's Baked Apple Pancake (Clafoutis -ish)

2 Apples, peeled and sliced

Batter
2 Eggs
1/4 cup Cottage Cheese
3/4 cup Milk
1/2 cup Multigrain Pancake Mix (I use this)
1/4 cup Vanilla Protein Powder (20% off discount code info)
1/4 cup Sugar Free Torani Syrup (I used SF Caramel)
dash of Cinnamon
dash of Apple Pie Spice

Slice apples and arrange in a Pyrex baking dish or deep pie plate (any size around 8x8x2 would work) that has been sprayed with Pam non-stick spray.

Whiz the batter ingredients in a blender till smooth. Pour batter over top of the apples.

Bake at 425 for about 25 minutes or until puffed and lightly golden brown.

Serve a wedge with a squirt of Sugar Free Land o Lakes Whipped Cream and/or a drizzle of warmed SF Maple Syrup or SF Caramel Sauce. A piece topped with a dollop of sweetened Fage Greek Yogurt is great too.
