Leftover slices are great toasted the next morning for breakfast with a little smear of SF Jam.
1 Egg, beaten
3 Tablespoons Milk
2 Tablespoons Sugar Free Vanilla Torani Syrup
2 Tablespoons Canola Oil
3 Tablespoons Multigrain Pancake Mix (I use this)
1 teaspoon Sugar Free Peach Jello Powder, dry
1 Tablespoon Unsweetened Coconut
1 scoop Vanilla Protein Powder
Pinch salt
dash of Cinnamon
1 - 2 cup Measuring Cup or Microwave Safe Mug
In a measuring cup or microwave safe mug, Mix egg, milk, syrup and oil (applesauce or cottage cheese can sub for oil but 2 T divided between 4-5 cake slices is really not a lot) and combine thoroughly. In a separate bowl, mix pancake mix, Jello powder, coconut, protein powder, cinnamon and salt. Tip dry into wet and stir till combined. Nuke in microwave for 2 minutes (my microwave is getting old and needs 20 seconds added now.)
Protein cake slices are also great topped with a scoop of Protein Ice Cream. A scoop of Almond Protein Ice Cream or Caramel Swirl Protein Ice Cream would be delicious on this cake.

Hi there, I am a non-surgical dieter and think these cakes look awesome. I also have a vegetarian husband who is always looking to add more protein to his meals... anyway, I was wondering if you know the calories on these? Thanks!
I don't put the nutritional info on my recipes because frankly that can vary so widely. I use full fat cheeses (the good stuff) others may use low fat or (horror) non fat, the % fat on beef, differences in packaged products, brands of protein, etc. will change the info dramatically.
To find the nutrition info on this recipe (or any other) is go to a site like fitday.com (sparkpeople or nutrition data) type in each individual ingredient, take the cals, carbs, fat, and protein totals they give you and divide by the # of servings you get from the dish.
I just love your cake's....just wondered if you would ever consider filling another void in my life....Protein Cookies?? It's a lot to ask, I miss the crunch factor and thought then I could also make ice cream sandwiches :D

P.S. Be sure to also take these cake batters and pour into a 12 cup mini baking pan. 12 minutes at 350 for muffins.
Oh My Gosh, Shelly! Ty, ty, TY for giving us so much inspiration to try creating our own recipes! Seeing your recipes work out so well gave me the gumption to try to make a variation of your two minute cake, with SF white chocolate and macadamia nuts! My Hubby (-151 lbs since WLS on 12-12)says he can't believe he's allowed to have it, it's so good! His dietician directs all her patients to your website. Quick question in your cake recipie you dont list the ingredient or how much to use for the cake, but in the directions you mention jello powder? Can you let me know which to use and how much? Thanks
