Shelly's Tiramisu Protein Shake

1 cup Vanilla Soy Milk (you can use ANY milk or milk/water combo. I'm a soy girl)
1 Tablespoon Sugar Free DaVinci Kahlua Syrup
1 Tablespoon Sugar Free Jello Cheesecake Pudding Mix, dry
1 scoop Click Espresso Protein Powder
1 scoop Chocolate Protein Powder
3-4 Ice Cubes

Whiz in blender till smooth. Top with Sugar Free Land o Lakes Whipped Cream or rim glass with Unsweetened Cocoa, optional.

Post Weight Loss Surgery Menus: A day in my pouch

Thanks for all the positive feedback on these "day in my pouch" posts. I'll try and throw at least one a week up if I can remember to snap food porn pics before I gobble it up.

For new blog readers here's my standard disclaimer: always follow your medical posse's advice. These are things I eat. They are fine on my plan but may not be on yours. As for portion size... what I eat as a 3 1/2+ year post op will obviously be different then someone say 4 months out. I should note too that I'm not a member of the clean your plate club anymore so just because I put it in a bento or on a plate doesn't mean I ate it all. The local ducks at my park often share a few bites with me. Look to your nutritionist and/or weight loss surgeon for suggested portion sizes. I am not a weight loss surgery expert, nutritionist or bariatric surgeon... I'm just another post-op trying to fight the daily battles against obesity and come out a winner for life.

Yesterday. My post weight loss surgery eating day.

Breakfast: I made a yummy Muffinless McMuffin

Shelly's Muffinless McMuffin

You need:
Stainless Food Ring
Non-stick Pan
Pam non-stick cooking spray
1 Turkey Sausage Patty
1 Egg

Spray the inside of a food ring (you know the ones I use to make my Protein Ice Cream Cakes) and a pan with Pam. Place in pan. Place defrosted turkey sausage patty in center of ring and begin to heat.

When you hear the sausage sizzling a bit. Crack an egg on top of patty. I like to break the yolk but you can leave whole.

Cook on low till almost set. Take a butter knife and run around the center of the ring and pull off.

Flip to finish cooking on other side. You can top with cheese (I did) or salsa. I used sausage but you could use bacon, veggies. Mmmm leftover roasted veggies would be great in this.

Lunch: You guys know I don't do rice (by choice) so when I'm jonesing for sushi I make my California Roll salad.

All the yummy things that make up a California Roll without the useless white carbs of rice.


Dinner: I picked up some shallots (4 for $1) last week at the Farmer's Market so I caramelized them. Which just means I cooked them low and slow till golden. The natural sugars in the onions (in this case shallots and green onions) "caramelize" and become Mmmm heavenly. I used them to make a killer Tortilla Pizza.

Shelly's Caramelized Shallot Tortilla Pizza - Mission Carb Balance Whole Wheat Fajita Size Tortilla topped Havarti Cheese, Caramelized Shallots and Green Onions, Roast Beef Cold Cut, Mozzarella Cheese, a sprinkle of Parmesan and Italian Seasonings.

Snacks: Oodles of coffee, Roasted Chickpeas and I am addicted to this yummy frosty protein shake I've been making. It's been super soothing on my throat and I think the frosty aspect helps bring down my temperature.

Yep, I'm still not rid of this creeping crud. I currently feel like I've been trampled by a herd of really angry elephants. I actually had started to feel a bit better, ran some errands and as I was walking around Costco I felt like I was going to hit the cement. I think I tried to do too much too fast. I'm just really sick of being sick. It's getting me down and of course the list of crap I'm not doing but should be doing is getting longer and longer. Ughh. OK LOL pity party over. Thanks for all the get well wishes by the way they have brightened my day :)

Shelly's Snowball Protein Shake

8 oz. Vanilla Soy Milk
1 scoop Vanilla Protein Powder
1 Tablespoon Sugar Free Coconut Torani Syrup
Handful of Ice Cubes

Whiz in blender till frosty. Top with Homemade, No Sugar Added Whipped Cream and a sprinkling of unsweetened coconut, optional.


Crepe Escape

I love to have breakfast for dinner. Eggs and bacon or ricottage pancakes. Last night I made sweet crepes. I was talking to my friend Heather (a post weight loss surgery tweep) and her family does breakfast for dinner once a week. They call it Blinner. I love the name. So here was my Blinner last night...


Shelly's Crepes

2 Eggs, beaten
1/2 cup Soy Milk (I use Silk Vanilla)
1/4 cup minus 1 Tablespoon Water
1 Tablespoon Sugar Free Torani Syrup (I used SF Vanilla)
2 Tablespoons Canola Oil
1/2 cup Spelt Flour
1/2 teaspoon Baking Soda
dash of Salt

For savory crepes: leave out the SF Torani and use 1/4 cup water.

Blend all ingredients on low till thoroughly combined. Pour into a bowl, cover and refrigerate for a half-hour.

Spray a non-stick 8 to 10 inch crepe pan with Pam. Pour 1/4 cup of the batter into the pan and twirl it around to spread the batter in a thin circle.

Cook till top appears dry and flip. Cook a minute or so on other side. Repeat till all batter is used. While you are making them you can keep them warm in a low oven 200 degrees or nuke for 20 seconds before serving. Makes 8-10 crepes depending on size of pan.

Yes, you can use a fry pan but crepe pans with their shallow sides make the process so much easier.

Fresh Fruit (Peaches, Blueberries or Strawberries with Sweetened Ricotta or My Apple Pie Innerds)
Warm Sugar Free Jam or Jelly
Warm Sugar Free Maple Syrup
Protein Ice Cream
Peanut Butter or Peanut Butter Yogurt Dip
Sugar Free Chocolate Sauce (Mmmm warm with Banana it's heaven)

A day in my pouch

Well I think I'm coming through the other side of this creeping crud finally. Today is not as bad as yesterday. Which isn't saying much but heck I'll take it. Do everything you can to prevent getting whatever it is that is flying around this year because it packs a wallop. I probably got it from some germ laden shopping cart. You know those things are like little Petri dishes of nastiness. I think I'm gonna give them up and start walking around with all my groceries piled up in my arms. Ehhh if I did that I'd probably end up dropping something, falling down and getting impaled by produce. You can't win.

I am always in somewhat jealous awe of those who say they lost their appetite while ill this never happens to me. I always manage to eat. Here's what I had yesterday.

Breakfast: Mmmm 2 Cherry Berry Mini Muffins sliced in half and sauteed till golden and crispy.


Shelly's Cherry Berry Mini Muffins

3/4 cup Spelt Flour
1/2 cup Strawberry Protein Powder (20% off)
1 teaspoon Baking Powder
1/4 teaspoon Cinnamon
dash of Salt
1/4 cup Cherries, chopped, frozen, defrosted
3/4 cup Fresh Strawberries, chopped
2 Tablespoons Unsweetened Shredded Coconut
2 Eggs, beaten
2 Tablespoons Cottage Cheese
1/4 cup Sugar Free Vanilla Torani Syrup
1/2 teaspoon Vanilla Extract

Optional topping: 1 Tablespoon Unsweetened Coconut

Preheat oven to 350. Spray mini muffin tin with Pam and set aside. Mix all ingredients (except topping) together till combined. Spoon into muffin tin. Sprinkle unsweetened coconut on the tops of each muffin. I usually do half the batch.


Bake at 350 for 12 minutes or until a tester inserted into the middle of a muffin comes out clean.

Remove pans from oven. Allow to cool in the pan for 3 minutes. Transfer to wire cooling rack to cool completely. Store in a sealed container to keep them soft and moist. Makes 24.

A couple of these babies split open, sauteed in a pan till they get golden crispy edges and smeared with No Sugar Added Strawberry or Blueberry Jam = Heaven. Nom nom nom.

I always freeze half the batch. I wrap them in plastic wrap and toss them in a gallon freezer Ziploc bag then take them out a hour or so before I want to eat them. To reheat: you can nuke them, toast them, or heat in a pan like mentioned above.

Lunch: Shelly's Chicken & Dill Tortilla Pizza - Mission Carb Balance Whole Wheat Fajita Size Tortilla topped Dill flavored Havarti Cheese, Sliced Chicken (cold cuts), a sprinkle of Parmesan and Italian Seasonings.


Dinner: Shelly's Speedy Stroganoff Meatballs and Steamed Carrots. I had 2 mushrooms in the house so I added 1 cup of frozen peas to my original version. Oh and I used Fage Greek Yogurt (2%) versus Sour Cream which I will do from now on.


Snacks: Shelly's Café Biscotti Protein Shake, a Cutie Mandarin Orange, 4 Dried Apricots, 10 Cashews, lots of Coffee.

Beware

This casserole was supposed to have zucchini in it but I made just after taking Benadryl. So yeah, zucchini never made it in. There really needs to be a disclaimer on the packaging of Benadryl just after the "Do not operate heavy machinery while using this product" message they need to add "Do not attempt multi-ingredient casseroles." I think they'd call this a CUI... cooking under the influence.

It was already baking when I realized so I just went with it and you know it was still really really good. Just what the Dr. ordered for this sickie... warm, cozy comfort food. Tasted like a Chicken Pot Pie without the crust.


Shelly's Crustless Chicken Pot Pie

2 Boneless, Skinless Breasts, sliced into 1" pieces
1 Leek, sliced (white & light green parts only)
1 Yellow Onion, diced
3 Green Onions, diced
6 Mushrooms, sliced
2 cloves Garlic, minced
1 cup Frozen Peas, defrosted
1/2 cup Storebought Alfredo Sauce (I used jarred)
1 Tablespoon Powdered Chicken Base (in the soup/bullion section)
1/2 teaspoon Thyme
1/2 teaspoon Kosher Salt
a few twists of Black Pepper
1 Tablespoon Parmesan Cheese
2 Tablespoon Durkee Onions (You know the Green Bean Casserole kind)
Olive Oil for sauteing

Saute chicken till golden. Remove from pan and set aside. Saute leeks, onions and mushrooms till golden. Add garlic cook 1 minute more. Add chicken back to the pan along with remaining ingredients (except Durkee Onions and Parmesan.)

Mix till combined and pour into a Pyrex casserole dish. In a snack sized Ziploc crush the Durkee onions and Parmesan together and sprinkle on top of casserole.

Bake at 350 for 30 minutes until golden.

National Chocolate Mint Day

It's National Chocolate Mint Day. Seriously it is. Google it. So this was my breakfast because a.) I wanted to celebrate the holiday and b.) I still feel like crap and it was about all the energy I could muster this morning after I took a shower. Right now I'm sitting here sipping my shake trying to build up the energy to run a few must do errands... toilet paper is dangerously low.

I apologize in advance to the people of my town for scaring their young children with the crazy-haired walking dead zombie look I've got going on today.


Shelly's Chocolate Mint Protein Smoothie

8 oz. Vanilla Soy Milk (you can use any milk, water or water/milk combo)
1 scoop Chocolate Mint Ultimate Protein
1 Tablespoon Sugar Free Vanilla Torani Syrup
3-4 Ice Cubes

Sunshine Therapy

I spent most of the day outside on a lawn chair soaking up the sun hoping to bake out these germs that have invaded my body. It was 80 degrees, sunny, bright blue skies, a really beautiful day or at least what I remember of it from my Benadryl haze. What is in Benadryl OMG?! Those pills are intense. 2 of those suckers and you could drag me across state-lines by my hair and I wouldn't know. They should call them over-the-counter roofies.

Before I went outside for my sunshine therapy I packed lunch (leftover tuna salad) & snacks in my super cool bento box. Here's what was on the menu...


Blue Box (top left): Andes Sugar Free Mint (begone tuna breath) and (in green silicone cup) Roasted Chickpeas
Green Box (top right): Shelly's Toasty Oat Protein Balls
Pink Box (bottom left): Shelly's Pesto Tuna Salad
Orange Box (bottom right): Green Grapes


Shelly's Toasty Oat Protein Balls

1 cup Oatmeal (I used Coach's Oats)
1/2 cup Unsweetened Shredded Coconut
1/4 cup Creamy Peanut Butter
1/4 cup Sugar Free Torani Vanilla Syrup (on sale now)
1/4 cup Chocolate Protein Powder

Preheat the oven to 350°F. Spread the oats and coconut on a baking sheet. Place in the oven and toast for 8 minutes, stirring occasionally, until lightly browned.

Mix peanut butter and SF syrup slowly till well combined. Add the toasted oats and coconut to the peanut butter along with the chocolate protein powder stir till well combined. If mixture is loose add a little more coconut, too stiff add a bit more syrup. Shape into 18-20 cocktail meatball size balls.

Refrigerate for a few hours before serving. Great in the fridge for several days. If you like chewy oatmeal cookies you will love these.

Well I enjoyed the time spent outside but I woke up this morning still feeling (and looking) like I've been hit by a Mack truck. OK well maybe not a Mack truck... but at least a compact-size SUV.

Post Weight Loss Surgery Menus: A day in my pouch

I'm sick. I have the creeping crud. Achy, chills, gnarly headache, sore throat. This is my first cold/flu/whatever it is since having weight loss surgery 3 1/2+ years ago. Yesterday I spent most of the day bundled up under a heap of blankets with my HP Mini and the TV remote drinking hot tea and I'm thinking that is pretty much the plan for today too. Well... I might set myself up on a patio lawn chair. The weather has been great 80's, sunny blue skies but I hear that maybe changing soon so I think I'll take advantage while I can and plop myself down in the sunshine. Hopefully bake this crud out of my body.

What I ate yesterday...

Breakfast: I'm on a strawberry kick. Strawberry = Vitamin C good for colds.


Shelly's Triple Strawberry Protein Smoothie

8 oz. Any Milk (I used Soy Milk)
1 scoop Strawberry Protein Powder
2 Tablespoons Sugar-Free Strawberry Torani Syrup
3-4 Frozen Strawberries (or Ice)

Whiz in blender till smooth. Top with Homemade No Sugar Added Whipped Cream, optional.


Lunch: No cooking just chop, mix and eat.

Shelly's Tuna Pesto Salad

1 cup Grape Tomatoes, halved
1 Cucumber, diced
1/4 of a Red Onion, diced fine
1 cup Frozen Peas, defrosted
1 can Tuna Fillets, packed in Olive Oil, drained (I use Roland Ventresca Tuna Fillets)
2-3 Tablespoons Storebought Pesto
1 Tablespoon Vinegar (any fruity one will do cider, champagne)
1/2 teaspoon Kosher Salt
a few twists of Black Pepper

Mix together all ingredients and let marinate at least 1 hour before serving.



Dinner: Another easy one. A few minutes assembly toss on grill, close lid, walk away. Back in 15 minutes to a perfectly cooked dinner with virtually NO CLEAN-UP :) ate it with steamed green beans (not pictured)

Shelly's Pesto Halibut Packet

1 fillet of Halibut (any firmer white fish will do: Cod, Halibut, Tilapia, Orange Roughy)
1 Green Onion, chopped
1 Tablespoon Storebought Pesto Sauce
2 cloves of Garlic, minced
1/2 teaspoon Kosher Salt
a few twists of Black Pepper
a slice of Lemon
Aluminum foil

Ingredients listed are for one packet multiply it for how many packets you are making. Place all ingredients in the center of a piece of heavy-duty foil (if you are using the $1 store stuff double it) Fold the foil over and seal each packet.


BBQ 15 minutes in covered grill. Open packets carefully steam burns are not fun.

Snacks: Cutie Mandarin Orange (more Vitamin C) and tons of soothing Herbal Tea, a few cups of Coffee in there too I tried but couldn't go all day without it.

Neapolitan Protein Smoothie

This weekend I made this blast from the past creation. A Neapolitan Protein Smoothie. When I was a kid we always had Neapolitan Ice Cream. You know the one with the side-by-side stripes of strawberry, vanilla, and chocolate. I think my Mum got it to minimize my supermarket aisle bitching as to what flavor we'd get. With Neapolitan you got three in one. I have many childhood memories sitting on the stoop eating bowls of that ice cream.

You know that point when the summer sun melted your bowl of frozen goodness into a delicious chocolate-y pink soup? This protein smoothie is soooo that flavor...

Shelly's Neapolitan Protein Smoothie

8 oz. Chocolate Soy Milk (or Vanilla Soy w/ 1 T SF Chocolate Syrup)
1 scoop Strawberry Max Protein
1 Tablespoon Sugar Free Vanilla Torani Syrup (on sale now)
3-4 Frozen Strawberries (or Ice)

Whiz in blender till smooth. Top with Sugar Free Land o Lakes Whipped Cream, optional.
