Shelly's Quick Chicken Parmesan
Boneless, Skinless Chicken Breasts, pounded flat
2 Tablespoons Tomato Sauce (per breast)
1 Tablespoon Parmesan Cheese (per breast)
Olive Oil
Pound (with the flat side of a meat mallet) chicken breasts between two pieces of plastic wrap to 1/2 inch thickness. Brush lightly with olive oil. Place on BBQ with lid down for 5 minutes. Open lid and flip chicken. Spread tomato sauce on breast & sprinkle with Parmesan cheese. BBQ with the lid closed till chicken is done & cheese is melted. Use really good tomato sauce something with basil & oregano. Homemade or the only jarred I will use is Rao's which tastes like my Sicilian Grandma's.
This is great served with sauteed spinach or grilled zucchini or a mixed green salad.

Been reading your blog for 6+ months now & have NEVER left a comment!! Not that I didn't want to but....working full time & I have two young boys! You can only imagine where all my free time goes...HA!! Anyhoo, I have lots of questions but, only have time for one...what do you consider a "good carb" for us post by pass patients?? I struggle with that! I had bypass 11/07 & have done great!! I have lost 170 pounds & have finally "stabilized" in the last few months, my weight may vary +/- 5 pounds. I just don't think I am getting enough carbs to maintain an adequate energy level. Any suggestions on carbs (they always seem to give me stomach pains/gas) &/or energy?? Thanks in advance...your blog ROCKS!!

I love following your website. I check it most every day. I have tried many of your recipes and love them all. I use the Max Protein and love it. I had surgery in January and have lost 90#s so far. I am at a plateau and have been for 6 weeks. Need to kick up the exercise and keep a better diary. Do you have a suggestion as to a way to do a kick start. I have tried the 5 day pouch and can only get through 3 days . Connie

Congrats on your -90. That's about where I had my longest stall.. -80 for 1 month. Just keep doing what you are doing protein (maybe up it), water, watch those simple carbs, maybe change up the exercise a little if you walk do some cardio, if you do cardio do some swimming... different muscle groups shakes things up for me.
I hate that darn pouchtest crap. LOL. No dieting after WLS. WE had WLS to get off that roller coaster... it messes up your metabolism.
It will kick in again. I though WTH?! this is it... it wasn't ;)
