Best part... you can eat a few of these without guilt. Can't say the same for the real deal. I will be making a tray of these for the 4th of July for sure. Soooo good!
Shelly's Strawberry Cannoli
12 Large Red Ripe Strawberries, washed & cored
1/2 cup Ricotta Cheese
1 Tablespoon Sugar Free Torani Syrup (I used SF Vanilla)
dash of Cinnamon
Optional toppings:
Unsweetened Coconut
Grated Sugar Free Chocolate
Chopped Nuts (Chopped Pistachios, Pecans, or Hazelnuts are great)
Wash and core strawberries. Leaving a hollow in the berry. Set aside.
Cut end off and pipe mixture into hollowed strawberries. Dip into optional toppings.

oh yea. I'm definately trying these this week. I've been on an icecream binge. I've made strawberry, mint chocolate chip and chocolate this weekend. Hopefully with the increase in protein I can see the scale move a little bit! Who else can say they eat ice cream and expect to lose a few pounds.

Seriously. I'm sitting at my desk at work slack-jawed, practically drooling on my keyboard and knowing I need to get back to work.

OH MY GOSH! I just made these to take to the Jimmy Buffet concert and of course I had to try one. Though I was in heaven. Used the SF Caramel, might try ta splash of Malibu Passion Fruit Rum next time. YUMMY

Okay, I'm not gay (not that there's anything wrong with that) but I think I love you. The only thing that I might possibly add is a little bit of orange zest. These would be good at Christmas too, covered in some chopped pistachios.

These are fabulous! I am living in strawberry heaven. Just made a batch with cookies & cream protein powder and irish cream sf syrup and can highly recommend this combo.
With me being 23 days out and on soft foods,you think it would be ok for me to make and eat these for superbowl? minus the nuts?

The filling would absolutely be great for you at that stage, oodles of protein. The berries... that's a Q for your medical posse. Everyone's Dr's have a different set of rules. Give a call and ask about strawberries/fruit if its not in your paperwork. You could send/show them a copy of the recipe.
I made these in advance for tomorrow, but the filling was 'soft'. they because a little runny after sitting a few hours. Any suggestions?
Susan :( They are not something you want to make in advance... well... you can hallow out the berries ahead of time but the filling should be done just before serving (a 1/2 hour before max) berry juice will stain the ricotta too and it won't look pretty.

Wow, I made the filling today just to try it. It was great. I always thought that I didn't like Ricotta cheese. I am going to get some strawberries today and serve them to my daughter. She is going to love it!
I made these on Memorial Day and they were a hit! I have a family reunion tomorrow and I'm making a double batch. I love putting the blueberry on top.

I am only 4 months out from my bypass and practically live on your blog site to get food ideas (I'm NOT a good cook). This month, at work, it was my turn to plan a potluck so I went with a healthy food theme and made the strawberries. Lo and behold, my coworkers LOVED them - and so did I - so I am grateful that you share your creations with us!
