It's National Donut Day. Let's celebrate!
National Donut Day started in 1938 as a fund raiser for the Chicago Salvation Army. Serving hot coffee and donuts to firefighters, rescue workers, and disaster victims is just one of the many ways The Salvation Army helps in times of need. The donut came to symbolize that good work.
I have to say the famous Salvation Army donut recipe is a little scary with loads of SUGAR and LARD. I made a batch of my weight loss surgery friendly donuts this morning to keep the tradition of Donut Day alive. Mmmm Donuts.
Another way to keep the tradition alive is to make a donation to The Salvation Army so that they can continue their good work.
Shelly's Mini Chocolate Protein Donuts
1 cup Almond Flour (aka Almond Meal) (Trader Joe's, health food stores, online or make your own)
1/2 cup Chocolate Protein Powder
1/2 cup Multigrain Pancake Mix (I use this)
1 teaspoon Baking Powder
1/2 teaspoon Cinnamon
2 Tablespoons Unsweetened Cocoa
1 Egg, beaten
3 Tablespoons Sugar Free Torani Syrup (I used SF Vanilla)
1 Tablespoon Canola Oil
1/4 cup Water
Super Groovy Mini Donut Pan
Preheat oven to 325. Mix all ingredients till well combined. Spray Mini Donut Pan with Pam. Fill 1/2 full with batter (batter is the consistency of brownie batter). Bake 8 minutes. Remove from pan and cool on wire rack.
Donut Glaze
4 Mini Sugar Free Chocolate Bars (or milk, dark or white chocolate)
1 Tablespoon Sugar Free Torani Syrup (I used SF Vanilla)
Nuke for 30 seconds or so till melted. Stir to combine. Coats 12 donuts.
For colored/flavored frosting: combine SF white chocolate & 3 drops or so of food coloring, SF Syrup and nuke for 30 seconds or so till melted. Stir to combine.
Dip cooled donuts into chocolate glaze and then into optional toppings.
Crushed SF Candy (SF Candy Canes, SF Malted Milk Balls)
Toasted Unsweetened Coconut
Crushed Nuts (Peanuts, Hazelnuts, Almonds)
Crushed SF Cookies
Coffee is brewing.
Now the dilemma of the day... which pretty donut to eat first?

I was just drooling over your donuts and had to laugh when I clicked on your Salvation Army link and found out that today and tomorrow are the TSA's Donut Days.
Had to laugh as I work for the TSA's Officer Training College in Palos Verdes, CA. Naturally, I told everyone in my office.

The raspberry syrup is DELISH in my protein shake - Milk, Protein, 1/2 Banana, dash of syrup. It's like drinking dessert!

So I have tried to make your donuts, and they haven't worked so well. They taste good, but mine turn out VERY dry. I don't own a super groovy donut pan, so I just put a spoonfull of the dough in a mini muffin pan. Do you think I might be baking them too long, or can I add a bit more oil to moisten things up a bit? I also think my homemade almond meal isn't ground as fine as what I can get at the store. I think I will quit being so cheap and just buy the superfine stuff.

E, If you make your own Almond Meal just be sure it's powdery (use a coffee grinder) and you know the pan may make a difference too. They aren't in the oven too long 8 minutes because of the donut hole... good heat transfer.

Thanks! I hope you enjoy them! I eat two but when I was earlier out I probably could have only eaten one... kind of depends on your Dr's plan and your capacity.
If you want to figure out the nut info on them enter your ingredients (brands will change stats dramatically) into a clean day on something like fitday.com take the carb, protein, fat toltals they give you & divide by serving you get.

I actually live in Austin and used to work for one of the officers (he is retired now) that went to Matthew's house that night. To hear these guys tell the story, it was all in a days work....but I know deep down they were all wishing they looked as good as he did naked! :0)

Is there any reason CarbQuik wouldn't work in place of the multigrain pancake mix? That is what I have on hand and I'm dying to make these this weekend.
I've never used the CarbQuik product before but if it make pancakes I don't really see why not? It should have the consistency of brownie batter.

This recipe sounds so good, I would love to try it, but I need a substitute for the almond flour, (allergic), I thought about trying oatmeal ground fine. Do you have any other suggestions?

Hmmm oatmeal... not sure might be too dry. Oatmeal has a tendency to soak up liquid (like when it's used in meatloaf etc.) Nuts have oils. Spelt flour maybe?

if 12 can you cook 1 batch at a time?

I added DaVinci SF Almond Syrup because I didn't have any Vanilla. They came out really good. It gives it a really nice flavor.

Just ordered a mini-doughnut pan YAY! Are these freezeable? (Is that a word?) Although I bet my kiddos would help me eat them, haha. I almost have to hide in the pantry with protein shakes because my 2yr old steals them! Last night I had a chocolate-pb one and he totally jacked it! Kept saying "Mmmm, this is GOOD Mama!" Yes, thank you, I know. Anyways, sorry my question went on a ramble....

They will freeze just don't decorate then defrost & decorate.
Love your site! I do have a question however, chocolate is not really a big thing in our home. There is an allergy towards it in our family, so I was wondering how to make these without chocolage. I am sure there is an easy way around it without messing up the true recipe but I am all thumbs when it comes to changing up something that works in the recipe. Help? :)

You can freeze them, just don't decorate them. Freeze, defrost, decorate.
Shelly I was so looking forward to these donuts because I'm a true blue donut feen, but mine came out hard and tell me if this is why. I could not find your multi-grain pancake mix so I used biscuit health choice instead and I didn't have the donut pan so I used a mini muffin pan. I told myself I would invest in the donut pan if I like them but they where horrible. any suggestions? should I try again?? HELP would Love a tasty donut!!
Theresa, Sorry your ingredient substitutions didn't work out. Baking is like that... my rule of thumb is always do a recipe the first time to the letter then the second time I may mess to suit my tastes... sometimes the messing pays off sometimes they end up duck food at the park ;) They are awesome when you use the correct ingredients. Worth finding the ingredients. Good Luck!
Hello! I wanted to let you know I made the donuts in the mini muffin pan - and they came out great if you bake them at 300 degrees for 7 minutes. I saw that others were having a problem with that.I also substituted the Carbquik for the pancake mix, and they were good. I think next time I will try with the pancake mix, though! Also, I put this recipe into Livestrong/MyPlate, using the mini muffin serving. My husband and I were pleasantly surprised at the yummy-ness of the donuts/mini muffins and I was be making them again! Thanks so much!
I just altered the recipe. Made lemon blueberry donuts with a lemon glaze! OH MY WORD! these are GREAT! I used vanilla protein, no cocoa powder, and used lemon zest from a lemon, and added a little extra water. Added blueberries (4 per donut after they were filled. Lemon glaze was splenda and cornstarch (wizzed in blender) the mixed with 2 tbs lemon juice!
oh and I had to increase the bake time by 2 min.
Ok, I don't know what I did wrong. Maybe I should have used less flour. For starters, I used Soy flour instead of Almond because it was cheaper. It was 10 bucks for Almond flour. I used a cup of Soy flour, 1/2 cup of pancake mix, 1/2 cup of protein powder plus the other ingredients you listed, it did not come out as brownie batter, it was very dry so I had to add quite a bit more water. What did I do wrong? Either way they tasted good.
Hey Katie, Well glad you got to eat'em still but no substitutions on this recipe gotta use Almond Flour on this one (acts/cooks/tastes very differently than soy flour). Not a huge soy flour fan (I have a couple of old school recipes that use it but have stopped buying it.)
Trust me Almond Flour is worth ever penny... but make your own if you don't want to spend the $$ for pre-made (Trader Joes is the cheapest $3 a bag.)
Raw Almonds + Coffee Grinder = Almond Meal (Almond Flour is just w/no skins)
Made my first batch this morning...I am speechless. These are so good! I have not been disappointed with one thing of yours that I have made yet. Recipes are easy to follow, and so yummy! Can't wait to try another flavor.
Could you use wheat flour in place of the almond flour?
@Susan, I'm sure you could but... it's waaaay lower in protein & waaaay higher in carb.
I tried it with the wheat flour. They used much more liquid and did not turn out s good as the time I made them with Almond flour.
I would like to share a tip... I love the donuts, but I always make a mess making them... or did... until I started scooping the batter into a disposable decorating bag, and squeezing the batter into the pan. :) It's easy to do, easy to clean up, and makes perfect shaped donuts every time!

On a slightly tangential subject, can you tell me what the difference is in the Torani classic syrups and others? And some are marked "with Splenda" -- does that mean some don't have Splenda? Or are they not sweetened with anything?

@Fangirl, Not that I am aware of... I think the "classics" are the "common" flavors like caramel, vanilla, hazelnut. They are all Splenda sweetened flavor suspensions.

I like the idea, but unfortunately I'm very allergic to nuts, so almond flour is right out.
I'm wondering if my Atta flour (essentially Indian stone ground wheat flour) would work as a substitute.
