French Onion Bites

If you are a fan of the classic French Onion Soup... golden brown caramelized onions and gooey Swiss cheese you will love these Bites. Ohhh and caramelizing onions makes your kitchen smell sooooo good.

This is a super lunch with a salad if you are having vegetarian friends over. Try my Italian Bean Salad with it... one of my favorite post weight loss surgery meals. They also make super appetizers for a party and a great breakfast on the go.

Bites freeze great if you can keep them around long enough... non-ops and kids love 'em. They are great up to 3 days in the fridge. I reheat in a toaster oven, regular oven or microwave.


Shelly's French Onion Bites

2 Yellow Onions, diced (or 1 of those big Walla Walla or Maui Onions)
1 cup Swiss, grated
5 eggs
1/2 teaspoon Kosher Salt
1/4 teaspoon Thyme
a few twists of Black Pepper
Butter for caramelizing

Caramelize onions till golden brown. Cook in a teaspoon of butter on a low to medium low heat for about 20 minutes, stirring every 5 minutes or so. It takes awhile to caramelize the onions but don't rush this step it makes all the difference in the world. When onions are golden brown set aside to cool slightly before adding to the eggs & cheese. Mix all ingredients together.

Spoon into lightly greased (Pam works great) mini muffin tins.

Bake for 30 minutes at 350. Makes 24.
