We get creative from time to time my Mum and I. Martha Stewart likes to demon possess her too. Here's some of our other crafty creations.
So after the markets I hit the new section of the mall. God help me there is now a Coach and Williams Sonoma within walking distance of my house. I was good though and left bag-less and gadget-less.
Then I took a super looooong walk. I've had a gnarly headache (sinus I think) for the last few days and I needed to breath some of the good stuff and soak in the warm rays. It helped.
I came home and made lunch. This yummy Tropical Chicken Salad we ate on the patio.
Shelly's Tropical Chicken Salad
2 cups Cooked Chicken (I used a Rotisserie)
1/2 cup Papaya Mango Salsa (I used Trader Joe's fresh)
1/2 a Hothouse/English Cucumber, peeled and chopped
1/4 cup Sliced Almonds
1 Tablespoon Mayonnaise
1 Tablespoon Fage Greek Yogurt
1 Tablespoon Cider Vinegar
1/2 teaspoon Kosher Salt
a few twists of Black Pepper
Mix all ingredients together and serve on a bed of mixed greens. You can also serve it as a wrap.
and now I'm listening to tunes and sipping my Starbuck's Banana Vivanno knock-off...
Shelly's Banana Protein Mochacchino for 2
2 cups Vanilla Soy Milk (you can use ANY milk or milk/water combo. I'm a soy girl)
1 Tablespoon Sugar Free Torani Syrup (I use SF Vanilla)
1 Banana
1 scoop Click Espresso Protein Powder
1 scoop Chocolate Protein Powder
3-4 Ice Cubes
Add liquid, then powders, then additions and blend on high. I serve it with a squirt of SF Land o Lakes Whipped Cream and a drizzle of Smucker's SF Caramel Syrup.
Slurp.
A great day. Hope yours was wonderful too and full of WOW moments. Life is a series of moments. Spend them wisely we don't know how many we have.

Those flowers are to dies for! I just LOVE daisies and tulips. I cant wait for the FM(s) to start around my house so I can take in all the prettiness!
Yum! I just made myself a banana macchiato clone too! I used a different protein powder in cinnamon cappuccino and some cold coffee, since that's what I had, but it turned out to be delicious.
Thanks for the inspiration (also for the flower photos...we don't have farmer's markets here yet, either).

Shelly - I have just started reading your blog, I found out about it on OH. You are a great writer! Your recipes sound so yummy! I can't wait until I've recovered more so I can start trying some of them. I had my RNY on Monday March 23rd. I have already saved your site as a 'favorite' and look forward to reading often. Thanks so much for all your tips and ideas - you make everything about the way we eat seem normal. Does that make any sense?
Thank you again - I'm so glad I found this site!
oooh are you talking about the promenade in Temecula? I haven't been to the new edition yet, but i am going next week hopefully.
Yep. Those 2 stores are very dangerous for me. LOL.
Thanks guys hope you enjoy the salad.
Those flowers are absolutely gorgeous, and I love your bag!
Hey, random question: I am pre-op, and started doing some protein shakes to lose weight to shrink my liver a bit before surgery. The soy vanilla protein powder I got from Trader Joe's is, well...gross. I was thinking about making some mini muffins for my hubby's lunchbox with it, in hopes that all of the other stuff would mask the taste (and he needs more protein in his diet anyway), and I was looking at your recipes. Do you think I could use regular flour in place of spelt?
Thank you :)

Kelly,
White Flour should be fine.
Best wishes on your surgery. It was truly the best gift I ever gave myself.

Okay, those flowers are GORGEOUS!
I totally need to get to the Farmer's Market. I have never been to the one here in town.
I'm convinced we live in the same city. My old town looks the same as yours. I'm going to make my first foray to the Farmers Market tomorrow. I'm ashamed. I've lived here 10 years!!
I'm still figuring out how to read a blog. I saw your bento boxes and now can't find them. I'll keep looking. That's a great idea!
