The casserole and the lunatic

Food Snobs Beware. Here's another casserole to add to the ever growing list of Eggface casseroles.


Shelly's Confetti Casserole

1 cup Chicken, boneless, skinless breasts diced 1" cubes
1 Yellow Onion, diced
3 green Onions, diced
2 cloves Garlic, diced
3-4 Yellow Squash, sliced
1/2 cup Mixed Veggies (I used Bird's Eye frozen peas, carrots, corn, green bean mix)
1/2 cup Spinach, cooked and chopped
1 teaspoon Oregano
1 teaspoon Kosher Salt
a few twists of Black Pepper
1 cup Bruschetta Sauce (find it in the fresh pasta section I use Trader Joe's brand but Buitoni/Contadina make one)
1 - 10 3/4 oz. can Cream of Chicken Soup
1/2 cup Shredded Italian 4 Cheese Blend
Oil/butter for sauteing

Saute chicken till golden. Set aside. Saute onions till golden. Add garlic and cook 1 minute. Add squash, frozen veggies, spinach. Turn to low heat and cover for 5 minutes. Stirring once or twice. Add soup, bruschetta sauce, seasonings and chicken back to the pan and stir to combine.


Pour into a Pyrex casserole dish. Top with shredded cheese.


Bake at 350 degrees for 30 minutes until bubbly and golden.

This was dinner yesterday. Another reason I heart casseroles. They come together in a flash and can be prepared ahead of time. I was running around doing errands yesterday and then I went for a long walk so it was nice to have dinner made and waiting.

So yeah I went for a walk yesterday. Walking is my major form of post-op exercise. I can't stand smelly gyms. I need the outdoors, fresh air. Anyway... I'm on my walk and this man is walking toward me, waving his arms and yelling "asshole, asshole!" So I'm thinking maybe Tourette's or a mental patient who didn't pick up his refill, right?

Wrong. He was talking on one of those hands free cell phone devices. I hate those things. Do people realize how crazy they look? Remember the good old days when a person wandering down the street cursing into the air was just a good old fashioned loon. I miss those days.
