This one would be awesome on a breakfast buffet. They heat up really well in the toaster oven (or regular oven) so you can make a batch and get several breakfasts out of it. The cute mini size makes it a neat weight loss surgery friendly appetizer or light supper with a salad.
Shelly's Ham & Cheese Breakfast Bites
1/2 Yellow Onion, diced
3 Green Onions, diced
6 Mushrooms, chopped
1 teaspoon Butter
1/4 lb. (about 4 slices) Ham, diced (I use Boars Head Cold Cut Ham)
1/4 teaspoon dried Basil
1/4 teaspoon dried Oregano
a few twists of Black Pepper
5 Eggs
1/3 cup Tomato, diced (I used S&W canned, drained)
1 cup Shredded Cheese, Italian Blend
Preheat oven to 350 F. Saute onions in butter till golden. Add mushrooms and saute 1 minute more. Add chopped ham and saute another minute more. Set aside to cool.
Mix all ingredients together. Be sure veggies and ham mixture has cooled slightly before adding to egg mixture. Spoon (I use a small ice cream scoop) into lightly greased mini muffin tin. Bake for 30 minutes or until centers are firm. Makes 24.

Would these be ok to eat during the puree phase?
Nope not on my plan. Dr.'s usually want pureed to be the consistency of something whizzed in a blender or food processor.

Hi TIA: Go to fitday.com on a empty day enter each item, add those and divide by the # of servings
This # will vary greatly on what % fat cheese you use, meat, etc.

Marguerite: I think it would be fine but I'm not sure how you'd have to adjust the time. Maybe lower a few degrees and add some time.
Oh my gosh! Heaven! I didn;t buy enough mushromms so I added sliced black olives. So good! I've been eating string cheese and cottage cheese for about a week so of course they would be good but yummo! I had one for dinner and froaze the rest for quick breakfasts! I alos did the zuchinni Bites today. I can't wait to they the other versions. So good and perfect for my current soft foods diet.

Hi Shelly, I made these once when I was about 3 months post op and they didnt agree with me- but I had been having trouble with eggs. My family devoured them though! I am 7 months out now and want to try them again, I am wondering if I make them with egg whites would that work or would they not puff up in the oven? What do you think?

I just made these becasue I never have time to sit & eat breakfast unless I want to be late for work. Getting up earlier doesn't interest me! These are great to pop in the microwave & eat on the go. I have made several of your recipes and my hubby and I love them. Two & half months out from WLS and I'm down 5 sizes. Thanks for the help!
I just ran the Breakfast Bite recipe through Recipe Calculator and here are the stats: Cal 37; Total Fat 1.8; Total Carb 1.0; Fiber 0.1; sugar 0.2; Protein 4. This info is for 1 Breakfast Bite. Not bad! This is using Fat Free Mozzarella. This info is an approximate because of the type of ingredients may vary.
Do breakfast bites freeze well? I am looking for something I can freeze and then microwave before work as needed. Thanks!

Some comments say they freeze these. How do you wrap them for the freezer and how do you recommend reheated them for maximum flavor and good texture.
To freeze: Cool, wrap in plastic wrap or ziploc them, then place in a tupperware, then I defrost in fridge and bake or toaster oven (my fav) or nuke to reheat.
I didn't skim all the comments, but want to caution anyone who might try paper liners to make these.. DON'T. They stick to paper!! Fortunately I made a test batch before making a bunch for coffee time at church. ::grin::
Help! I've made these twice and both times they stick to the pan. What am I doing wrong??? (They are so delicious I want to make them again!!!)

if i jus made these mini bites from ( a mini muffin tin makes 24 bites) how many am i able to have per serving? i followed the recipe to the t.
It depends... I can eat 3 with a scoop of something like a salad or veggies but portion should be something you discuss with your medical posse. 4 month out will be different from 4 years out.
Hubby and I are almost 13 weeks post op and this morning, I made these and the pancake bites. Both are a HUGE hit with my granddaughter, hubby and me. :-)
