In my garden


The gladiolus are opening and OMG!?! I watered my tomatoes and I swear they grew another foot over night. A few are over 6 feet I'm 5'2" and they tower over me. I'll post some pics. I am going to be inundated this summer. I bought all these killer heirloom tomato plants from this year's Tomatomania at Quail Gardens LOL maybe a few too many. I guess I'm going to be making a lot of salads and sauce. I also have cucumbers, zucchini, summer squash and a ton of herbs growing (dill, basil, thyme, marjoram, chives, rosemary, mint)

Gonna go hit the supermarket and Vitamin Shoppe now... all out of soymilk and I can't have that and I want to pick up a few more of those Oh Yeah Vanilla Peanut Butter Creme Bars. They rock! Soooooo good. Speaking of good. I had a reaaaaaallllly awesome dream last night. Ever have those dreams where you wake up and you lay there trying to slip back into the dream. It unfortunately never works. Well... it was one of those. I need to follow my -100 pound post advice: "Don't be content living in your dreams without trying to make them real." Yeah huh.


Tonight's Dinner:

Shelly's Quick Chili

Serve with the following fixings: sour cream, grated cheddar cheese, green onions, sliced avocado, and more hot sauce to taste.

2 pounds lean ground beef
1 large yellow onion, chopped
5 cloves garlic, chopped
1 14.5 oz can beef broth
2-3 Tablespoons chili powder
2 teaspoons ground cumin
1 14.5 oz can diced tomatoes
1 small can mild green chilies, diced
Hot sauce to taste
2 15.5 oz cans kidney beans, drained and rinsed

In a large soup pot or Dutch oven over moderate heat, cook ground beef, breaking up large pieces with a spoon, until it's no longer pink. Drain and set aside. Add the onion and cook until it is golden. Throw in the garlic and cook for a minute or so. Add meat back to onions and garlic. Stir in the broth, scrapping up any brown bits on the bottom of your pot. Stir in the chili powder, cumin, tomatoes with their juices, green chilies and hot sauce to taste. Bring to a boil, and then reduce heat to medium-low and cover, simmering for about 10 minutes. Add the beans. Simmer, uncovered, for another 10-15 minutes.
